Dear Easter Bunny,
Not all sugars are the same.
Pure maple syrup actually has some health benefits! It contains minerals (manganese, calcium, magnesium, iron, zinc, potassium, copper), is lower on the glycemic index, and houses powerful antioxidants!!

After collection, processing and boiling are finished, there is still much to be done! All of the equipment must be cleaned and sanitized: collection tanks, storage tanks, evaporator tank and pans, reverse osmosis machine, filters (so many filters!) and more. And of course, the entire sugar shack itself. Additionally, all of the taps must be pulled and the lines (tubing) sanitized. As the tubing is porous, and stays up throughout the year, sanitizing is necessary to prevent mold, mildew, and other undesirables from getting in during the offseason.
**These tasks are also done prior to the start of each new season**

A little tree humor……

Seeing a delivery truck coming up the drive, and knowing that the expected delivery was a very large and heavy one, Hank went out to help the driver. Once at the truck, he noticed that it wasn’t the “regular” driver, and introduced himself. As he did so, the drivers eyes kept glancing over his shoulder. The man turned to see what had the driver so distracted, and saw his 3 dogs heading towards the vehicle - a Rottweiler, a Labrador, and a Chihuahua.
He looked back at the driver, smiled, and said, “They’re an eclectic group for sure. Their names are OAK, PALM, and MAPLE. Don’t worry about them, they’re harmless! All BARK and no bite!”

When Damon states his syrup is handcrafted… it’s not just the syrup itself.
After bottling, he finishes each large syrup bottle by hand, adding a pull-tab before dipping the top in wax and personally attaching his signature maple leaf charm.
Now that’s dedication to detail!

Our first field trip is in the books! Lizzy presented information on maple syrup history, trees, nutrition, and production. Damon gave a tour of the sugar shack, demonstrated equipment, and explained tools and processes, from tree selection to hand waxing the tops of the syrup bottles.
Everyone left happy and 2 lucky raffle winners took home one of our homemade Pancake Pals!

It’s been awfully quiet on our page the last few days, but it’s not because we’re resting!
Our very first batch of Maple BBQ Dry Rub is now available at the farm, and Damon will soon be visiting retailers to supply them as well.
AND
We have also been preparing for our first field trip to the farm ….. tomorrow!

Just look at these ribs - they were delicious!
