For those who LOVE hot stuff, we have a new burger to introduce today. It has been a while since we developed a new flavor. When Asadoras Argentinas Burgers gave us their recipe for their Habanero Bacon Jam, we knew what kind of burger we needed to make. Thank you, Asadoras!! We miss you!!

The result of our efforts is the Habanero Jammer!! Each team member here brave enough to try it, loved it!! Two of us even said it is the new favorite burger.

We included my favorite sauce from Gindo's Spice of Life - Honey Habanero, along with finely chopped habaneros, habanero jack cheese, and our steak seasoning.

The heat sneaks up on you. Not too hot for first few bites, but by the time you finish, a very nice mouth and lip burn.

Also, we did receive some Copper River King Salmon. Our son and I had some and LOVED it. He described it as buttery crab tasting. It was soooo good!! I prepared mine with the skin on and ate that as well. Very nutritious. It is expensive right now ($89.99/lb), but last year I wasn't able to get any. The Copper River season is short and so is supply. We have the rest packaged and frozen in individual portions in the black freezer.

We have continued to sell out of the breaded pork tenderloins ever since we posted about them. We made more yesterday.

Our community partners mean so much to me! Sages Meat Market - Oswego has started smoking the beef brisket for our campfire supper. We’ll enjoy it after tomorrow’s Red Dead Redemption-inspired moonlight horseback ride. Now all I have to do is fill up the water guns.

Enchilada Wednesday, but unfortunately some of our delivery days changed because of holiday. We are short on tortillas, so we will only be doing ground beef today. We will try to do shredded chicken and shredded beef tomorrow.

We do have those available today frozen.

It is also the beginning of Copper River salmon season. For King and Sockeye, the season is short. We did receive Sockeye yesterday, and hope to receive King soon.

If you want to try these while available, call and order and we will let you know when we have your order ready.

Enchilada Wednesday!! We will have those all ready later this afternoon.

This is also the follow-up post for the breaded pork tenderloins. We love the tallow products from South Chicago Packing. We use the spray quite often, too, like for quickly griddling tortillas for tacos or for sautéing veggies. We have been selling quite a few of the small glass jars of tallow lately.

All the products we offer from The Brinery are great. The kimchi is fantastic, and I try to eat some every day if I am not having any of the Sauerkraut products. But this Dill Pickle kraut is so good on so so many things, as well as just eating out of the jar with a fork!!

We have started making the tenderloins smaller so they will also fit in an air fryer. We love them and think they are some of the best you will ever have. It starts by having a knowledgeable butcher picking out great-looking pork loins to use for the product. And again. you can always place an order if we don't have any in the freezer.

These Cristal buns are something I have had in the past and loved. And now one of our suppliers offers them, so we jumped at the chance. You can see the ingredient list is very clean compared to any bun you will find in a grocery store. I haven't seen any other bun ever that uses olive oil. Try these!!

We mentioned ordering ahead for the weekend. We will be closed Sunday and Monday, but open normal hours Saturday.

The smoked salmon disappears quickly, so if you know you need some, please order that, along with burgers, brats, kabobs and steaks

We don't post very often at night, but I had to share my meal. I will post pics tomorrow morning of everything involved in this wonderful treat of a sandwich.

Someone ordered breaded pork tenderloins today. Each time I make them, I usually think, "Wow, these are so good - I need to have one." So I did tonight.

When that person came in to pick up her breaded tenderloins this afternoon, we got into a discussion of how I enjoy them. I told her as a sandwich, which was a new concept to her. That is just how I grew up having them.

And with cheddar cheese and pickles, on a brioche bun. In this instance, I told her I was trying my new favorite bun that we introduced last week - Cristal. The other newer item that I now love on breaded pork tenderloins, hot dogs, and brats is the Dill Pickle Sauerkraut from The Brinery. It is sooo good on stuff!

This was also the first time I fried it in the beef tallow that we offer. Perfectly fried golden brown and the tallow makes things never greasy. We both agreed that it may have been the best tenderloin ever!! So good!!

Our Sunday meal was Sages' Mexican Skirt Steak. We love the marinade and it makes tremendous fajitas!! We also have it available on our Amish chicken breasts.

A new dip for the shop is our Veggie Dip. It is new to the Sages, but I grew up on it. My mom was making it for a graduation party, and I asked her to give me the recipe. Love it!! Sweet and Tangy and Delicious!!

This weekend is Memorial Day weekend. Please order ahead if you know what you want. We had a hard time keeping up on Mother's Day, and we assume this will be busier. Burgers and brats are made continuously, but that doesn't mean that we aren't out at times while we catch up.

We will be closed next Sunday and Monday, so plan ahead to pick up Friday or Saturday.

Happy Thursday!! We have some special treats available for Mother's Day weekend!! We have Sages' Own Greek Tortellini Salad. Wonderful, fresh aroma this morning while making that!!

We also have Lemon Blueberry cookies. These are FANTASTIC!!

A brand new item is a bacon egg croissant. We tried these the other day and the dough is amazing. I would put more bacon in them, but they were made by a New York pastry chef. Really delicious, easy treat for a morning or anytime. Thaw and bake for about 20 minutes.

Yesterday was Enchilada Wednesday, so we have several trays of those remaining.

We will be stocked up on snack sticks by this afternoon, too.

If you are preparing a meal for mom, make sure to order and reserve what you need.

We have three types of salmon right now. We normally have Ora-King and Scottish(which we also smoke), but today we have some wild troll caught King salmon, as well.

We just smoked more of the leg quarters with the new rotisserie rub. It seems like I eat these every day!! We sold out quickly on Saturday. Get them while you can. Two for $10.

Enchilada Wednesday!!

A customer asked, "What smells so good?" I responded, "It is Enchilada Wednesday. That smell is the shredded beef that just got done slow-roasting. Would you like to try it?" He said, "Yes." I gave him some, and he proceeded to taste it and utter all kinds of moans and complimentary words. I showed him the grand champion award we won with shredded beef enchiladas. They are PRETTY, PRETTY, PRETTY GOOD!!

We have shredded beef, ground beef, and shredded chicken today.

You can call ahead to order trays with corn tortillas instead of flour. You can also order any of the meats in one pound packages. Make your own tacos or quesadillas or whatever.

We are donating 10% of our sales today to R Cooper Family Farms LLC. Please come out and help us support them.

We have a new item to share. We made a rotisserie type rub to put on the Amish chicken. We brought in whole chickens and leg quarters and smoked them.

We do love much of the stuff we create, but we really LOVE this chicken with this rub!! Addicted. We made some earlier in the week, but basically, we ate them all - between Ann and I and our son.

We will be smoking more leg quarters later today and will get more next week. We also packaged up some fresh leg quarters in case you want to do your own thing with them. The Amish chicken is the BEST!!

if you would like to reserve some of the ones we are smoking later, call the shop to reserve and we will let you know when they are ready. We can also put the rub on whole chickens or leg quarters or do a cut up chicken if you want to smoke/bake at home. Just order ahead.

The first pic was the result after air frying one that was smoked. It was perfectly crisp skin and the flavor is sooooo good!!
