Exciting news — we've added two new Fresh-Milled grains to the Crumb Kitchen lineup! 🌾
Einkorn is one of the oldest cultivated wheats in the world. It has a simpler gluten structure than modern wheat, which many people with mild gluten sensitivities find much easier to digest. (It's not gluten-free, but it's often far better tolerated.) With its golden color and lightly sweet, nutty flavor, einkorn shines in tender baked goods — cookies, muffins, pancakes, quick breads, pie crusts, shortbread, and delicate pastries.
Khorasan is a large, golden ancient berry with a rich, buttery, almost nutty taste and naturally higher protein than modern wheat. It's wonderful as a whole grain in hot cereals and pilafs, and the flour is beautiful in pasta, flatbreads, pizza dough, pancakes, rustic loaves, and hearty cookies.
Why Fresh-Milled matters: Whole grain berries are naturally packed with daily vital nutrients — magnesium, zinc, iron, B vitamins, fiber, and antioxidants — but those nutrients begin to degrade within 24–72 hours of milling. That's why commercially bagged flour sitting on a shelf has lost most of its goodness long before it reaches your kitchen.
