Did you know Florida boasts the longest history of cattle ranching in the U.S.? Spanish explorers introduced cattle to the peninsula as early as 1521, laying the groundwork for a thriving industry.

A Legacy of Cattle Ranching

• Pioneer Settlers: In the 1820s, pioneers from the Carolinas and Georgia settled in the Euchee Valley and Paxton areas of North Walton County, establishing roots that would grow into a vibrant farming community.

• Current Landscape: Today, Florida is home to approximately 15,000 beef producers and cattle operations, predominantly operating as a “cow-calf” state. This means ranches breed and raise calves to about 400-600 pounds before sending them to western states for finishing.

These early mornings are where every jar begins. We carefully select honey from the cleanest forage we can find, screen it to avoid glyphosate and pesticide exposure, and only bottle harvests that meet our family’s standards for cleanliness and taste. 🍯

New salad option we are working in this week. Peach and Arugula salad with toasted pecans and feta plus red onion and fresh purple basil. I am working on the right dressing but it looks like the honey vinaigrette is the winner. These will only be offered in an individual salad portion instead of our large version. The base is our spring blend topped with Arugula, red onion, feta, toasted pecans, fresh picked peaches and honey vinaigrette with a little purple basil for a pop. These are only seasonal while the peaches last.
