The Champagne grapes are small and seedless, making them great for topping salads or for serving on a cheese board. A Sicilian favorite, the sauce in Pasta al Pomodoro Crudo is described as "crudo" because the tomatoes and other ingredients are not quite cooked. Instead, these fresh ingredients are already bursting with flavor and only need to be warmed up.

Agata's Pasta al Pomodoro Crudo (serves 4-6)

Ingredients:
1 pack cherry tomatoes on the vine (cut in half if small or quartered if larger)
1 cup A&V Sicilian Unfiltered Extra Virgin Olive Oil
2 large cloves garlic, minced
1 bunch basil, leaves rinsed and chopped
1 tsp. freshly ground black pepper
¼ tsp. crushed red pepper flakes
Ricotta salata or Parmigiano Reggiano for grating
Optional: Capers in salt, rinsed, drained, and chopped

Directions:
Two hours before serving, combine ingredients in a bowl to marinate.
Bring to boil in large pot of salted water:
1 pound short shaped pasta (like fusili or rotini)
Drain pasta, leaving a little al dente, and set aside.
Pour contents in bowl into a frying pan and warm over medium/low heat for 1 minute. Add drained pasta and stir gently to amalgamate, 2 minutes more.
Grate fresh ricotta salata cheese or Parmigiano Reggiano on top to taste.

Ingredients:
Two 1 1/4lb live lobsters

Directions:
1. Fill a deep pan with 1 inch of water and set over high heat.
2. Once the water is simmering, place the lobster in the pan. Make sure to remove any binding on the claws and tuck the tail in if needed to fit the lobster in the pan.
3. Cover the pan and cook for about 8 minutes or until lobster is bright red.
4. Using tongs, remove the lobster from the pan and rinse under cold water.
5. Repeat the process with the second lobster."

Peak soft shell season is upon us 🦀 Come by the fish counter to pick yours up and try our easy, delicious recipe for Lemon & Parsley Sautéed Soft Shell Crabs!

Ingredients (serves four):
8 cleaned soft shell crabs
1 cup flour
3/4 cup melted butter
1/2 cup A&V Sicilian Extra Virgin Olive Oil
3 tablespoons lemon juice
1 tablespoon chopped parsley
Salt and pepper to taste

Directions:
Heat a large cast iron skillet over medium heat.
Place flour on a plate, and season with salt and pepper.
Dredge soft shell crabs and flour, shaking off excess.

When the skillet is hot, add half the butter and oil. Then, add 4 crabs (backside down to limit splashing) to the skillet. Flip crabs over when they begin to brown and cook on the other side. Drain on paper towels and repeat with remaining crabs, adding more butter or oil to the pan if needed.

In a small bowl, stir together remaining butter and lemon juice. Drizzle over crabs, sprinkle with parsley. Serve immediately and enjoy!

A family favorite, Agata remembers her mother making this take on Pasta alla Norma, which she later served her own daughter growing up. Whole Roasted Branzino with Fresh Herbs (Serves: 2 people)

Ingredients:
2 whole cleaned Branzino– approx. 1-1 ½ lbs each
1/3 cup White Wine
1/3 cup clam juice (or water)
10 tbsp. total of Agata & Valentina Extra Virgin Olive Oil
Zest of ½ a lemon
1 lemon, sliced into 1/4""-thick half moons
4 sprigs fresh thyme
4 sprigs fresh parsley
4 sprigs fresh tarragon
2 leaves of fresh sage
2 sprigs fresh rosemary
2 cloves of garlic, smashed
Sicilian Sea salt or Kosher Salt, to taste
Ground black pepper, to taste

Directions:
Preheat oven to 350. Slice open the belly of the fish and season inside with salt and pepper. Divide the lemon slices, garlic and fresh herbs evenly between the two fish and stuff them inside the belly of each fish. Line a baking sheet with aluminum foil. Transfer fish to foil. Rub with 3 tbsp. oil; season outsides of fish with a little more salt and pepper. Pour 5 tablespoons of Olive Oil , white wine and clam juice (or water) into your baking pan. Roast for 25-40 minutes (depending on your oven) Test for doneness repeatedly-you can tell the fish is done when its white and flakey. Once the fish is cooked, remove from oven and use a spoon to pour the juices from the pan over your fish to moisten it. Drizzle remaining olive oil on top and sprinkle with lemon zest.

Agata recommends serving with a baked potato and sautéed broccoli rabe with garlic & lemon!

ALL THIS AFTER SPENDING a FEW THOUSAND DOLLARS IN YOUR U.E.S. STORE EVERY YEAR BETWEEN SHOPPING FOR GROCERIES AND CATERING SERVICES! IT'S PATHETIC!😡
Don't go to the store on the upper east side. I spent 30 minutes trying to get some cooked meat and vegetables. Their checkout machine could not read my debit card (which I use everywhere else all the time) so I had to leave the bag of groceries. I asked the cashier to hold it for me so my husband could go right back with another card. Meanwhile, my card was fine and the bank contacted me with a fraud alert because their machine tried to charge my card 3 times. And...when my husband went back 20 minutes later, the cashier told him that she did not hold the groceries for us. When you call, you can never speak to anyone on the phone. Stay away!

Sunday was my daughter's birthday. Since we couldn't be there with her for a family celebratory dinner, we sent a care package of goodies for her from Agata. The good people at Agata delivered it on time, with a Happy Birthday note, and happy birthday written on the cake. Thank you Agata.
