We are remembering today a member of the Shambles family that we lost a year ago. Howard's many years of experience and expertise in whole animal butchery were invaluable to us as we got the Shambles off the ground. Without his unmistakable air of authority and gravitas, we would have just been a couple of goofy drunks hoping to be butchers. His presence will always be missed. Rest in peace, old friend.

Happy Holidays everyone. Please order in advance for pickup on Christmas Eve. We will be closed on the 25th and 26th, reopening for regular hours on Wednesday the 27th. We will also close early, at 2pm on New Year's Eve, and remain closed on New Year's Day.

How often do you meet an eleventh generation butcher? Paul Santner of Santner Fleischerei in Salzburg honored us with a visit. Santners have been cutting meat and making sausages since the 1600's! Rumor is that Paul's great-great-great-great-great grandfather made a weisswurst that Mozart's dad called the finest in Austria; more recently their sausages have been called exquisite by Heinz the Baron Krauss von Espy! Butchering is truly in this guy's blood.

Apple Tart with Caramel Ice Cream - Gordon Ramsay

This apple season has been an incredible one so far! This great and simple recipe from Gordon Ramsay takes advantage of all the fresh apples available and our incredible new Salted Caramel ice cream from Van Leeuwen Artisan Ice Cream. If you happen to participate in the Lancaster Farm Share (Harlem)that runs out of our shop on Monday nights we know you've been getting tons of seriously tasty apples!

(Don't worry if you don't have a blow torch! Just set the apple tart in a pie pan, apply the confectioners sugar and then set that pie pan in a slightly larger pan that's full of cold/iced water to keep the apples from over cooking. Toss that puppy in a high heated broiler for 3-4 minutes and you'll still get a beautiful glaze.) #AppleSeason #HibernationPreperation #Local
