It is with sadness that we tell you, our dear friends and loyal customers, that Anne Saxelby Founder and Co Owner of Saxelby Cheesemongers passed away on October 9 2021. She was a driving force in the American Artisan Cheese movement and touched many of us with her kindness, knowledge and passion for well-crafted artisan cheeses. She was one in a million.

It is a tragic loss for her family, her friends, the food community and our company. We want to thank you for all your heartfelt messages of support, they are needed and greatly appreciated.

Be assured that the Saxelby team is here to carry on her legacy and honor our mission: Our relationships with our cheesemakers are the driving force behind what we do; we aim to know and celebrate the how and why behind each cheese in every season, and share that knowledge with cheese lovers everywhere. We are dedicated to supporting sustainable, regenerative agriculture, bolstering rural economies, and ensuring the American artisan cheese community thrives for years to come. That’s what we do, every day.

Happy Moldy Cheese Day! We cheesemongers LOVE mold… it’s what gives blue cheese (and all cheese) its amazing array of flavor. Did you know that blue cheese doesn’t start off blue? It starts off looking like any other cheese, but the cheesemaker adds a special strain of mold to the milk during the cheese making process that needs oxygen in order to grow. After a few weeks of aging, the cheesemaker pierces the wheels of cheese to allow oxygen in, which activates the blue mold and creates ‘veins’ of blue throughout the wheel. This particular mold gives blue cheese its signature mushroomy and peppery flavor profile!

Verano is Back! This seasonal sheep’s milk cheese from Vermont Shepherd is one of America’s first (and best!) artisan cheeses. Cheesemaker David Major took his family to the Pyrenees in the 1990’s to learn the art of Basque cheesemaking, and took his learnings back home to create this incredible cheese. Verano is made from May through September each year when the sheep are producing milk. Young wheels like the ones we have now are bright, citrusy, toasty, and just a hint woolly (in the best possible way) Each wheel is stamped with a unique batch number, indicating the ‘vintage’ of the cheese!

Hey! There’s a hole in my cheese! The hole you see here is a ‘trier hole’ made by a cheesemaker or affineur when they taste a batch of cheese as it is ripening to gauge the flavor and texture development. The cheese trier or cheese iron is a long iron stick with a concave shape that allows it to extract plugs or core samples of cheese. Since all cheese ripens from the outside in, this is the only way to evaluate the ripeness of a wheel without cutting it open prematurely. So if you get a wedge of cheese with a trier hole in it, it’s pretty much like a stamp of quality control direct from the cheesemaker.
