💙💚 Withersbrook Blue 💚💙
Sometimes, when we open a wheel of blue cheese, the fungi inside put on a little show for us. It’s not easy to capture on camera (why this isn’t the most beautiful photo), but when the blue mold is exposed to oxygen for the first time in a while, it’s turns a vibrant chartreuse-y green, before settling back into a deep shade of blue. This wheel of Withersbrook did just that! If you look really closely, you can also see a slight gradient from where the ice c***r wash permeated the rind. Cheese really is a living work of art!!!
