Silly Chilly Hot Sauce started with having a dream of winning the national prize of making the hottest hot sauce. I never actually began to take it seriously until summer of 2015. I had no idea how to make hot sauce but did some reading and watched videos on YouTube. From the videos, I made a list of a few things I must have: a food processor, two pans, canning jars and, of course, the ingredients (chili peppers/vinegar/salt/lime/lemon etc.).
After moving from Queens to Hoboken- I was on a very limited budget. I bought myself a food processor from Amazon with money given to me by my uncle for the holiday. The first jar of I made was horrible. I still packed the jar & took it show it my aunt & uncle in Queens. When I arrived, I took it out of my bag only to immediately hide it away again before showing what I'd created. I was ashamed.
Fast forward, 7 months later, experimenting and practicing every weekend, in between long weeks of my 40+ hour a week job in the city. By playing with different kinds of chili peppers, I learned gradually and improved the tedious process of canning. I now am proud to say that I have hundreds of jars of hot sauce. I can also confidently say that I make damn good hot sauce that you'll want to have every day with any food you feel should have a bold, unique flavor.
Each ingredient I use to make hot sauce is fresh and organic. I go to the farmer's market and handpick fresh chili peppers, garlic, herbs, & onions. I clean my kitchen thoroughly the day before I start prepping making hot sauce, disinfecting every area. I spend a lot of time to make sure every can of hot sauce gets the perfect amount of flavor and is then kept at the right temperature to secure its ingredients stay as fresh as the day I brought them home.
