Freezing before keeps the nutrients intact for 6+ months and also a crucial step so it doesn't go bad.
If you can't finish your baked goodie(s) in 1-2 days slice them and place in the freezer for up to 2-3 months. The bran in fresh milled flour will continue to absorb the moisture even after being cooked, leaving your baked treat stale quicker than regular flour typically would.
