We’ve been away from here for a while, but for good reasons! The Rusche family continues to grow, as three more future butchers were born this year.

Deer season was a great success with lots of happy customers bringing their harvests to us and getting back some fantastic cuts.

We got to spend some time as family this last weekend as we processed a couple of beef that will support our growing families for the next year.

We can’t express how excited we are to continue serving those around us as we have through this past year. The new births in our family are only outshined by the birth of Jesus Christ, and we want to wish everyone a very Merry Christmas!

Although our name is about the Brothers, we need to take a minute and honor the Mother behind us. Momma Rusche has been the role model that people dream of when it comes to selflessness, compassion, generosity, and loving on your neighbors.

She gives and gives with a never ending supply. Anyone that knows her knows there is always a place to stay or food to eat in her home, and she doesn’t stop there.

For years, she has poured herself into working the Hancock County Food Pantry where she has impacted lives all over the county.

Last night we were able to all join her to celebrate the grand opening of the new location off US 40, and boy what a facility it turned into!

Mom, as well as the other volunteers that make the pantry function, put in countless hours throughout the last 6-8 months and by trusting in God to deliver, they were able to bring to life their dreams of being able to serve others out of an extremely functional and incredibly nice facility.

To our Mother, all four of us brothers are so proud of you and love you with our whole hearts. Thank you for everything you do, and although you never ask for credit, you more than deserve to be recognized and praised. Love you, Momma Rusche!

As parents, aunts or uncles, older siblings, or just family friends, a safe assumption is that everyone has been influenced by the generation that was in our shoes before us.

At some point in time, we were taught by our parents, aunts or uncles, older siblings, or family friends. How to say please and thank you. How to hit a baseball. How to hide a hole in the drywall from a rather aggressive hockey game in the living room.

Many of us are also blessed with parents or other people who have taken the time to teach us about hunting, gardening, farming, and growing and processing animals.

Our great grandpa taught his son, who taught his two sons, who taught us four boys over the last three decades how to raise, kill and process our beef, along with hunting and harvesting wild game.

These lessons have shaped each of us and have continued to be core memories for us as boys and now as men.

Having the opportunity to pass down traditions and knowledge is not something to be taken lightly. It can define how the next generation develops and what level of appreciation they will have for nature.

Being able to influence our youth in situations such as hunting, meat processing, gardening, or any other activity can be daunting and challenging, but can be an incredibly rewarding experience.

Rest assured, all of us at Rusche Brothers Butchering have a ton of learning left to do, but we have a lot of awesome lessons, stories and knowledge that we want to pass along.

Whether it is meat processing, raising animals, hunting, fishing, or simply enjoying the outdoors, we recognize God’s glory in every situation, and we are very excited to share some stories and some knowledge with you all.

Believe it or not, you can get fresh, farm-raised shrimp right here in Indiana.

Thanks to RDM Aquaculture in Fowler, Indiana, we were able to have our very own cajun-style shrimp boil without having to head towards the ocean!

Shrimp are crustaceans, meaning they are invertebrates that have a flexible exoskeleton or shell.

This shell is made up of chitin (pronounced “kite-in”), a chemical compound that is a derivative of glucose, which we better know as what makes up sugar.

When cooking shrimp (as well as crabs and lobsters), most people prefer to leave the shell on because the chitin gives the meat a sweeter taste.

Their shells also contain a unique protein that, when heated up, releases a pinkish-red pigment called astaxanthin, giving the shrimp a deep pink color.

This pigment is also found in salmon, which is why a salmon filet has that deep orange/red color.

A shrimp boil is a great way to bring family and friends together for a New Orleans-esque experience.

Try out these tips if you are interested in hosting one!

Make it your own! Add potatoes, sausage, cabbage, carrots, peppers, lemon, crab… whatever sounds good!

Leave the heads on your shrimp when cooking along with the shells. They add extra flavor.

Boil the shrimp in the last five minutes of cooking and then take your pot off the heat source. The shrimp will continue to cook even after off heat and you don’t want to overcook them.

Pair your boil with some homemade cornbread. Adding honey into the batter makes it extra good!

If you have a curious cat or dog, make sure you keep a lid on the pot!

If you’re looking for an easy recipe that tastes like it’s straight from Grandma’s kitchen…

We got it for ya’!

🔥Grandma’s Round Steak and Gravy

2 lb round steak
Small potatoes
2 lb baby carrots
2 cans Golden Mushroom Soup
2 c. ketchup
2 envelopes dry onion soup

➡️ Mix soup, ketchup and dry onion soup thoroughly.

➡️ Add two cups hot water and stir well.  

➡️ In 9x13 baking pan, pour small amount of gravy on bottom to cover.  

➡️ Add round steak, potatoes and carrots – pour remaining gravy on top.   Cover and bake at 350 for 2 hours or until all is tender.    

Pssst…. Can also be cooked in instant pot (cook for 45 min) or in crock pot on low for 6-8 hours/high for 4-5 hrs.

According to the USDA, beef prices were up 22.8 - 43.9% in January 2022 compared to January 2021. Wholesale beef prices are expected to increase between 4.5 - 7.5% this year.

The rising price of beef might have you wondering how to save money in the future.

Here is how our family of two ate meat the entire year - reducing our reliance on the grocery store and lowering our monthly bill.

Below is the breakdown of farm raised animals and wild game that we have had in our freezer the past year:

1️⃣ Freezer Beef. We ate 1⁄8 of a cow and that actually lasted us over a year. This consisted of approx. 60lbs of ground beef, 5 roasts, 8 T-Bones, and 10lbs of stew meat.

2️⃣ Deer. Out of the two deer that we harvested this year, we put the following in the deep freeze. 30bs of venison ground with pork belly, 4 tenderloins, 20 lbs of summer sausage, and approx 15lbs of jerky.

3️⃣ Waterfowl. During the 2021-2022 hunting season, we killed 82 doves, 49 ducks and 77 geese (yes, we keep track of this). This resulted in lots of smoked duck breast, dove poppers, and about 40lbs of goose breast ground with breakfast sausage seasoning.

4️⃣ Fish. From March 1st to Memorial Day, we put at least 15lbs of crappie in the freezer.

Taking advantage of local beef farms, as well as all the hunting and fishing opportunities we have as Americans, it’s possible to save money on your meat consumption and not rely on others.

And in regards to hunting and fishing, we find the more time you spend in creation, the closer you get to your creator.
