Brad’s more than a little fired up about this new Mont Alpi outdoor kitchen setup. In fact, took everything in him to keep this tour to 30 seconds.

The fun part about Mont Alpi is that you can build exactly what works for your backyard. Some folks want a simple grilling station. Others want the whole neighborhood gathering around for burgers, ballgames, and a cold drink.

Mexican Pulled Pork Stuffed Poblanos are one of our favorite ways to use up leftover Pulled Pork. This recipe is easy enough to whip up on a weeknight, or just "fancy" enough to serve to guests if you're entertaining.

Try this at home!
Ingredients:
4 Poblano Peppers, halved and de-seeded.
Fresh Cilantro, Chopped
Fresh Avocado

Filling ingredients:
1.5 lbs of pulled pork
1 cup of corn (preferably grilled or fire-roasted)
1/2 cup of black beans
1/2 cup shredded mozzarella (or cheese of choice)
1/2 cup of Pepperjack cheese, shredded
1/4 cup of chopped cooked bacon
1/2 lime juice

Sauce Ingredients:
1 cup of sour cream
1-2 Tablespoons of Red Clay hot sauce
*Mix together

Add all filling ingredients to a bowl and mix thoroughly.

Pack the mixture into the halved poblanos.

Get your oven or grill (set up indirect) at 350-400 degrees.
Add some smoking chips if desired.
Cook for 15-20 minutes then add more cheese to the top to melt. Cook another 5-10 minutes or until the internal temp reaches 160 degrees and cheese is melted.

Spread sauce mixture onto the plate, then place the Poblano on top of the sauce. Add side of avocado, and finish by sprinkling some fresh Cilantro.

After one particularly messy steak night, Brad called his dad, John, and the two started kicking around ideas for a cutting board that would actually keep juices where the belong… with the meat, not all over your kitchen counter.⁠

The result was the original Concave Cutting Board. Years later, it is still a Pitner family favorite for carving steaks, brisket, pork, and anything else worth gathering around the table for (pro-tip, it also works beautifully for juicy melons!).⁠

Why smoke one pork butt when you can smoke two?! ⁠
Today we're smoking one BBQ pork butt and one Mexican style pork butt. And over the coming weeks we're showing you some really creative and delicious ways to use up all that leftover pulled pork.⁠

🐖 BBQ Pulled Pork Recipe:
Ingredients:
7–8 lb pork butt, fat cap trimmed & scored
Your favorite BBQ rub (We used Meat Church Gospel BBQ Rub.
3–4 chunks of apple, pecan, or hickory wood
Splash of vinegar-based BBQ sauce (We used Krazy K's Original BBQ Sauce)

🍖 Mexican Pulled Pork Ingredients:
7–8 lb pork butt, fat cap trimmed & scored
Favorite Mexican rub (e.g. Meat Church Dia De La Fajita, Dizzy Pig Fajita-ish)
3–4 chunks of apple, pecan, or hickory wood
2 small cans Hatch's Green Chiles
Splash of Adobo sauce

Method:

Let the pork sit at room temp for 1 hour. Trim, score fat cap, and season generously with rub.

Thoroughly mix 3-4 wood chunks (Apple, Pecan or Hickory) to the coals. Preheat to 275°F (indirect heat). Insert ConvEGGtor (feet up), place foil drip pan on top (large enough that the whole piece of meat fits over it), then add grill grate.

Place pork butt (fat-side up) on grate, over drip pan. Close lid and dial your temp to 275°F.

Cook until it until it hits “the stall” or internal temp hits 160°F (~5–7 hrs).

On double foil, add green chiles & Adobo sauce. Place pork in center, wrap tightly (no punctures). Return to smoker.

Return to smoker and cook until pork reaches 202°F (~1.5–2.5 hrs more).

Wrap in towel and rest in a cooler for at least 30 mins (up to 4 hrs).
