🗣️From Our Counter to Your Table: How to Perfectly Roast Your Bacon-Wrapped Tenderloin.

1. Preparation: Remove the roast from the refrigerator about 30–60 minutes before cooking to let it come closer to room temperature for more even cooking.
2. Preheat: Preheat your oven to 400°F–425°F.
3. Sear: Heat a large, oven-safe roasting pan or cast-iron skillet over medium-high heat with a small amount of oil. Place the pre-wrapped roast in the pan and sear it on all sides until the bacon is browned and crisp, which usually takes about 3–5 minutes per side.
4. Roast: Transfer the pan to the oven. Use an instant-read thermometer to track the internal temperature until it reaches your desired doneness:
Medium-Rare: 130°F–135°F
Medium: 140°F–145°F
5. Rest: Once the target temperature is reached, remove the roast from the oven and transfer it to a cutting board. Tent it loosely with aluminum foil and let it rest for at least 10–15 minutes before carving.
Pro Tip: If the bacon needs extra crisping after the roasting time, you can turn on the broiler for the final 2–3 minutes, but keep a close eye on it to ensure the bacon or meat does not burn.
