💚 2 SPOTS JUST OPENED FOR TUESDAY! 💚

Good morning friends! Two spots opened up last night for my Green Gnocchi class on Tuesday, June 9.

In this class, we’ll make spinach gnocchi completely by hand, from scratch, using simple ingredients and traditional techniques. Green gnocchi are made with real spinach worked into the dough, giving them that beautiful natural color and tender texture.

This is a hands-on, beginner-friendly class, and you’ll leave with the gnocchi you made yourself (2 servings), plus your own gnocchi board and the confidence to make them again at home.

Last night, we had our very first Cavatelli class in Cookeville! 🇮🇹

I have taught Cavatelli before in Monterey, but this was the first time bringing this beautiful handmade pasta shape to Cookeville, and it was a special evening.

Cavatelli is simple, rustic, and so much fun to make by hand. No fancy machine needed, just dough, your hands, and a little technique. Everyone did such a wonderful job shaping their pasta, and I loved seeing the table fill up with all those little handmade pieces.

A big thank you to everyone who came and spent the evening making pasta with us. I’m so grateful for the warm welcome my classes have received in Cookeville! 🥰

One more first in the books in Cookeville, and hopefully many more pasta nights to come!

📣 July Pasta Classes are coming soon!

I’m so grateful for the way you have supported my little business. What started as a small idea has grown because of people like you, and I don’t take that for granted!

June is practically sold out, so I’m starting my July first-to-know list early for anyone who would like to hear about the new dates before I post them publicly.

In July, I’m planning hands-on pasta-making classes for Cavatelli, Agnolotti, Pici, Gnocchi, Orecchiette, Fileja (also known as Calabrian Fusilli) and a fun 4th of July themed Ravioli class. Many of you have also asked me about pesto, so I’m introducing a Pesto Class too!

Most of my classes will still be held at The Biz Foundry in Cookeville, but I’m also planning one class in Fairfield Glade (woo-hoo!).

My classes are hands-on and relaxed. For most classes, you don’t need any pasta-making experience at all. You’ll learn how to make pasta from scratch, shape it by hand, and take home what you make.

A few moments from our last farfalle class for now 💛

Farfalle is such a beautiful shape to make by hand: simple ingredients, a little patience, and then suddenly the table is full of tiny pasta bows. It always brings such a happy energy to the room.

It was so nice seeing old friends and making new ones too! Thank you to everyone who joined us, learned with me, laughed with us, and made this last farfalle afternoon such a sweet one.

We’ll be taking a break from farfalle classes for some time to make room for other pasta shapes, so this one felt a little extra special. Until farfalle returns, thank you from my heart!

June hasn’t even started yet, and I’m down to only TWO spots left for the entire month. ❤️

I just want to say thank you. Truly. When I started offering these pasta classes, I hoped people would enjoy learning the Old World way of making pasta by hand, but I never imagined how much love and support these classes would receive. Every full class means so much to me and my small business!

Here are the 2 spots left:

• 1 spot for Agnolotti - Sat, June 20 • 2:30–5:30 PM @ The Biz Foundry in Cookeville • intermediate – longer, more detailed class • $90 per person (includes cutting tool)
• 1 spot for Orecchiette - Sat, June 27 • 2:30–4:30 PM @ The Biz Foundry in Cookeville • beginner-friendly • $65 per person

Green gnocchi has to be one of my most favorite fresh pastas! 💚 It pairs beautifully with a creamy cheese sauce, but it is just as good with a simple red sauce too. And last night, we spent the evening making this spinach gnocchi completely by hand, from scratch, the Old World way.

A big thank you to everyone who came and spent the evening with us. I hope you had fun learning this shape and enjoyed cooking your gnocchi at home!

Which of my three Italian-style sauces do you prefer?
💚 Toscana, 🤍 Adriatica, or ❤️ Arrabbiata?

Each one was created to complement my organic whole-wheat pasta, using simple ingredients and no shortcuts. These sauces are handcrafted and slow-cooked in small batches. I use real vegetables, extra-virgin olive oil, and no artificial additives.

Make sure to check the individual pictures for a detailed description of each sauce. Three sauces, three personalities, all made with the same care, right here in Tennessee.

Fun fact: if you place the jars in this exact order, they create the Italian flag. 💚🤍❤️

Two spaghetti favorites 💛🖤 Same shape, two totally different moods!

💛 Classic Spaghetti is the one you can never go wrong with, especially with my Basil Sauce or Arrabbiata Sauce.

🖤 Black Spaghetti (made with cuttlefish ink) is bold and elegant, and it’s amazing with something lighter like Olive & Caper Sauce, or simply garlic, olive oil, and seafood.

Both are bronze-die cut and made in small batches with my fresh-milled organic whole wheat flour and fresh farm eggs.
