Yom Tov leftovers, but make them tacos

If you have leftover roast sitting in your fridge, this is such a good way to completely reinvent it. The key is making sure the meat is cooked until it’s super soft and practically falling apart so it shreds easily. From there, these tacos are totally customizable—use whatever toppings and sauces you already have on hand.

Leftover Roast Tacos

Leftover roast, cooked until very soft and shreddable
Small tortillas
Guacamole
Arabian salad, I used Glatt Geshmak
Your favorite sauce, we used spicy mayo

Shred the leftover roast, warming it gently if needed.

Char the tortillas directly over the open flame of your stovetop for a few seconds per side, until lightly blistered and toasted.

Spread each tortilla with guacamole, pile on the shredded meat, add some Arabian salad, and finish with your favorite sauce.

That’s it. No exact measurements needed—just build them however you like and use what you have. The best kind of leftover makeover.

Green Bean & Mushroom Stir-Fry

The perfect side dish to add to your Yom Tov menu. Savory mushrooms and green beans are cooked with garlic, ginger, sesame, and soy for an easy side that’s simple to make but full of flavor.

Ingredients
2 cups baby bella mushrooms, sliced
2 cups fresh green beans, trimmed
Olive oil, for sautéing
1 tablespoon sesame oil
2 cloves garlic, crushed
1 frozen ginger cube
¼ teaspoon red pepper flakes
⅛ cup soy sauce
Toasted sesame seeds, for topping

Directions
Heat a large skillet over high heat. Add a drizzle of olive oil and the sesame oil.

Add the mushrooms and cook for a few minutes, allowing them to release their moisture. Add the green beans and sauté for about 10 minutes.

Cover the pan and cook until the green beans begin to soften.

Add the crushed garlic and frozen ginger cube and sauté for another minute. Add the red pepper flakes and soy sauce and toss to combine.

Cook for another few minutes, then top with toasted sesame seeds and serve.
