Spring Scallops Sheet Pan Bake with Brussells Sprouts, Shiitake Mushrooms, Vidalia Onions and Fiddle Heads

I'm always telling Janice about the dishes I make with the seafood I get at Salโ€™s every week. Some of of my favorites are sea scallops, Scottish salmon and sole. For this dish, the stars are fresh sea scallops and Moulton Farm produce. The best and freshest ingredients always make the best dishes. And I always recommend Sal's for the freshest, best tasting seafood in the area.

I love to throw together my favorite foods using this easy, quick to make method. And because itโ€™s just a method, I can make up my own combinations ad infinitum, and so can you.

The main thing to remember is that some ingredients cook faster than others, so you may have to add them in stages and/or take some out and keep warm if they cook too quickly.

You can also even out cooking times somewhat by cutting the longer cooking ingredients thinner or smaller, than the quicker cooking ones.

What about timing? My basic answer to how long do you cook this is โ€œUntil itโ€™s done.โ€ Youโ€™ll know when the veggies are simply down by look and smell, so keep an eye on them. For fish, meat and poultry, I recommend using an instant read thermometer to the optimum temperature for whatever it is.

The Method

Chop or thickly slice the veggies into bite-size pieces similar to those in the photo.

Toss them in a little EVOL (aka extra virgin olive oil,) a tiny bit of salt, lotsa fresh ground black pepper, other herbs/seasonings as you lik e- I used fresh rosemary with lemon juice squeezed over the top.

Spread the veggies out on a non-stick sheet pan. They can overlap, but they do need their own space. If the pan gets too crowded, theyโ€™ll steam, not roast. Better to use a second pan.

Bake in a preheated 425-450 degree oven until the vegetables are a little more than half done, softening and sizzling but not brown.

Then add the scallops that been given the same treatment with EVOL, lemon and seasoning, with the addition of a drizzle of honey.

Roast until the scallops are around 150-160 degrees when tested in the center. At this point they are cooked, but still tender and juicy If any of the veggies start to overcook before the scallops are done, remove them and keep warm.

After you take it out and artfully arrange everything on a platter, deglaze the pan with a tiny bit of white wine to scrape up all the yummy goodness. and pour over the top.

One final thing, if you happen to have any leftovers, they are delicious cold nestled on a salad.

Sal's Seafood, inside Moulton Farm, is the best seafood my husband and I have found anywhere. We just moved here from Portsmouth, NH, known as the Seacoast area, We could not find any place there that sold CONSISTENTLY good fish. Since finding Sal's fish we have been having fish twice a week. My husband keeps saying after dinner "these are the best scallops I have had anywhere, including nice Seafood restaurants; this is the thickest swordfish I have ever had; the freshest haddock etc". We have tried the tuna steaks, the shrimp, the salmon. You get the idea... And the service is friendly, and most helpful.
