5 years ago today, it all started with a surplus of squash! Fast forward to today, we are starting to wind down on the 3rd season of The Farm Cart! We cannot thank you enough!

We will be at the Medford Farmers’ Market from 5:00-7:00PM today!
For this evening, our Butternut Squash will be $3 each or 4 for $10! Our Honeynut Squash will be $2 each or 3 for $5! A great time to stock up for fall/winter.

Squash flowers are one of my favorite colors!
Fall my favorite seasons, and also the beginning of soup season! One of our favorite soups is squash soup. We start by pealing/seeding a Butternut, cutting it into 2 inch cubes, quartering an onion, pealing/seeding 2 apples (any apple, they all add beautiful flavor) and quartering that as well, and 3-4 stalks of celery in 2 inch chunks. Arrange on a lipped baking sheet, drizzling it with a little olive oil, salt, pepper, and Rosemary. Roasting at 400° until the squash is tender. Once it cools slightly, we put in a blender with some stock (vegetable or chicken both taste amazing), and blend until smooth. We add this back to a sauce pan with a drizzle of whipping cream. So good!
