If anyone has a dog that loves to chew stop by the large truck stop in Curtis WI. Abbyland Sausage smokes the cow bones from their sausage operation and they are wonderful. From small dogs to man eating beasts they have you covered at a fraction of what the big box stores sell their imported bones for. It is fantastic to see a company using these products rather than simply throwing them away!

We are thinking about creating a pheasant and a turkey sausage recipie. Should it be spicy, mild, or BBQ in your opinion? Once we create the recipie we will post it online for everyone to try. With beef and pork prices on the rise we are looking for budget friendly meats that families can use at home. Pheasant came up because a hunter in northern Wisconsin is looking for ways to get it out of his freezer.

Should any substance you can't pronounce be in something you would prepare for your family? Nitrates, added sodium, potassium sorbate to reduce mold growth! Mold growth? If any sausage or snack needs an added chemical to prohibit mold growth it might not be the best thing to buy and eat!

Please check and READ the food labels on the products before you buy them! Go natural, go healthy, your heart and health will thank you for taking the time to read the ingredients.

Many keep asking about Angus beef. Angus beef is still just beef! Marketing is the difference in this whole marketing masterpiece. When it comes to sausage you would never be able to tell the difference between one made with Angus beef and one that was made with plain old beef assuming the recipes are the same! The regulations also seem very vague about how much Angus beef needs to be in a product to be marketed or labeled as such. A pound of angus scrap in a two hundred pound batch could still be considered Angus right? We suggest saving your money and continue buying plain old cow scrap for your sausage making! Even if the Angus beef was mildly discernable from regular beef scrap that difference will be leveled since sausage has so many preservatives, seasonings, and salt added anyway. If Angus is all you have available or if it is the same price per pound or cheaper than regular beef by products than by all means give it a try. When the day is done Angus sausage is good old fashioned marketing trying to take a few more dollars out of your pocket.

Watch for the changes! With beef prices on the rise we are now using more pork products as the main meat in many recipies. You should not notice a large change in taste but you may need to adjust your cooking times because of the higher percentage of pork products in the recipie. Beef products can be substitued back in but will result in a higher cost per batch and increased time in your smoker. You may also notice more shrinkage when cooking because of the added fat content. We suggest using tongs when grilling to avoid puncturing the casings. Spraying your grill surface with oil will also help avoid sticking which can also rip or tear casings while turning. Grill flare ups are also going to be more noticable because of the added pork by-products.

We hate to admit that a local competitor has some products that are better than ours!

If you get a chance try some cheddar brats and some Philly Cheese Steak Brats from Hewitts Meats across from Genes Furniture in Marshfield. Their sauerkraut brats are also among the best we have ever had. While you are there pick up some of their legendary cheddar beef sticks. They have just a hint of crushed red pepper mixed in with that great tasting Nasonville Cheddar Cheese. We have to send a secret shopper into Weber's Farm Store to buy the products so we don't look like a Pepsi driver drinking a can of Coke! Sometimes you need to give credit where credit is due. They have a small family business and buy all their animals from local farmers so you know everything is fresh.

Our meat is trucked in from places like Abby and other similar locations around the US. Because we do not purchase the animals direct it is impossible for us to support local farmers in the same manner. That is why we suggest trying some of their products. Variety is the spice of life.
