🥙 Market-Fresh Chickpea Crunch Pita🌿 Ingredients
1 can chickpeas, drained & rinsed

1 small red onion, thinly sliced

2 cloves garlic, minced

1 cucumber, diced

1 tomato, diced

Juice of 1 lemon

1–2 cups chopped lettuce

1–2 celery stalks, finely chopped

Olive oil

Salt & pepper

Optional: parsley, dill, or mint from the market

🥗 Chickpea Filling
In a bowl, lightly smash the chickpeas with a fork (leave some whole for texture).

Add garlic, celery, cucumbers, and lettuce.

Drizzle with olive oil and the remaining lemon juice.

Season with salt, pepper, and herbs if you have them.

Mix until everything is coated and bright.

🥙 Assemble the Pita
Warm your pita slightly so it opens easily.

Add a handful of the chickpea mixture.

Finish with a squeeze of lemon or a drizzle of olive oil.
