Underground Meats is proud to announce a partnership with American Wine Project!

Started in 2019 by Wisconsin native Erin Rasmussen, explores the complexities of cold-climate winemaking with midwestern grape varietals. For our first project together, we've infused our Finocchiona with her incredible Light Verse Piquette Blanche.

The results are amazing, lending its subtle floral notes and boosting the sweet side of the fennel seeds in this classic Italian salami.
