MARKET MEALS ~ Mushroom Piccata Pasta
This is a simple, easy recipe that uses mushrooms instead of the traditional chicken. Go ahead and use chicken if you prefer. Also, take creative liberty and add in your favorite seasonal veggies. Peas, squash and roasted mini heirloom tomatoes would be a great way to boost the nutritional value and add color and more flavor.

Ingredients:
1 lb. fettuccine
2 Tbsp. extra-virgin olive oil (ALBINELLI or HEALTHY HARVEST)
1 lb. mixed mushrooms, such as baby Bella, oyster, or baby shiitakes, thinly sliced or finely chopped (GREEN YAMS or FOX FUNGI)
Freshly ground black pepper
6 cloves garlic, finely chopped
1 cup dry white wine
Pinch of crushed red pepper flakes
1/2 cup (1 stick) unsalted butter
1/4 cup capers
1/4 cup chopped fresh parsley, plus more for serving
1 lemon, juiced
In a large pot of boiling salted water, cook fettuccine, stirring occasionally, until al dente according to package directions. Reserve 1/2 cup pasta water before draining.
Meanwhile, in a large, high-sided skillet over medium heat, heat oil. Add mushrooms and cook, stirring occasionally, until deeply golden, 15 to 20 minutes; season with salt and black pepper. Add garlic and cook, stirring, until fragrant, about 1 minute more.
Add wine and bring to a simmer. Cook, stirring occasionally, until reduced by about half, 1 to 2 minutes; season with salt, black pepper, and red pepper flakes. Add butter and stir until melted. Add capers, parsley, and lemon juice and simmer, stirring occasionally, until slightly thickened and warmed through, about 2 minutes more.
Add pasta and 1/4 cup reserved pasta water and toss to coat, adding more pasta water as needed if pasta feels too dry.
Divide pasta among bowls. Top with parsley.

At 1 Simple Seed we sell Plantable Cards, Postcards, Bookmarks and Notepads. The paper for our cards is hand-made wildflower seed paper from Nepal. The paper is made by local villagers; their process is Fair Trade, eco-friendly and sustainable. This paper has wildflower seeds embedded inside, and can be planted to grow wildflowers! The designs on the cover of the cards are from my original, hand drawn watercolors and sketches. Our cards are small-batch designs handcrafted one at a time in our home studio.

MARKET MEALS ~ Asian Scallops
This is a delicious dish that will surely be a hit and a keeper on your dinner roster. If seafood isn't your jam, substitute chicken. Make it vegetarian and use a variety of steamed vegetables, including broccoli, snap peas, onions, carrots, cauliflower, and asparagus.
Serve over rice noodles or rice.

Ingredients:
1 lb. Scallops (Fisherman's Pride Alaskan Seafood -fresh-caught and frozen seafood)
2 T Honey
1 T Ginger
(Or use honey-ginger syrup from Foxtown Farm)
2 T. Soy Sauce or Tamari
1 T. Rice Vinegar
1 minced garlic clove
Chopped scallions
Cooked rice or rice noodles
Sesame Seeds

Clean and dry scallops. Coat lightly with salt and pepper. Mix honey, ginger, tamari, rice vinegar and garlic in a bowl. Heat a cast iron skillet to medium-high. Sear scallops on each side for approximately 2 minutes. Pour mixture over scallops and reduce heat. Stir until sauce becomes thick and bubbly approximately 3 minutes. Serve over noodles or rice. Add chopped scallions and sesame seeds.

Don is a long time retired aerospace executive and has been a woodworker hobbyist for many years. Don's products are kitchen tools with exotic wood handles, wood cutting and charcuterie boards. He has recently started to make wooden toy cars and hobbyhorses for kids.

This week for we are featuring Amy from Pies in Bloom. It brings us so much joy to highlight our incredible vendors each week and we hope you love learning a bit about the people behind the products. Don't miss Amy and her beautiful flowers and handmade pies every Saturday in Louisville through September 19!

Pies in Bloom started after I stepped away from a corporate healthcare career. I am a social worker by trade, and after many years in healthcare I felt pulled to reconnect with what matters most to me: people. The social worker in me never left. I am simply caring for people in a different way now.

For me, that care has always centered around the table. It is rarely quiet. Conversations overlap, animal facts appear mid story, and someone is always calling the last slice before it is even cut.

Pie has long been the favorite at our house. After years of elaborate desserts and late night baking experiments, I finally asked my three kids what they actually wanted. The answer was simple. Pie.

At the same time, gardening has always been the other half of the story. I have grown vegetables forever, but during Covid I started growing annual flowers from seed, eventually filling my laundry room floor to ceiling with flats. There was a certain irony in folding clean laundry in the same room where I was also repotting plants and tracking soil across the floor.

My backyard is tiny, so these days my focus is on cut flowers, growing things meant to be gathered, shared, and enjoyed by other people. This year I am partnering with a local farmer and growing in a greenhouse for the first time, annuals that have already survived Colorado’s wild weather swings and are ready to thrive in local gardens.

I am still in my first year, which means plenty of late nights and a few pies that definitely did not make the cut. Whenever possible I use fruit grown right here in Colorado, because good pie and good flowers start with what grows best close to home.

Pies in Bloom is where it all comes together. Pie, plants, and the table they are meant to be shared around.
