I recently made this 20lb brisket and port butt. Cook went fine on both proteins. One of my friends had a complaint that they prefer to have their meat be smokier. I smoked these on my Traeger and used a smoke tube that was smoking better than a diesel engine!

My question, with a pellet smoker, how do we achieve a heavy smoke flavor that we get with an offset smoker? I’m fully aware that an offset is burning actual wood and a pellet smoker is burning pellets. At the same time they’re both wood and technically the same thing. I’m trying to understand this a little better.

Smoked it with cherry wood in my smoker, then seared it on a cast iron with Wagyu beef tallow.

My step dad started a tradition a few years ago of giving us a full cow and pig for my birthday every year❤️ he says he’d rather know we have food for the year rather then something that isn’t specifically a need, but a want. This is one tradition we will work our asses off to be able to pass down to our kids as well❤️

Help identify cut!

We purchased this slab of ribs and the butcher shop labeled them as "beef short ribs." I've been reading how to prepare short ribs and these do not look like the short ribs on all these blogs.

I asked AI, and its guess is beef back rib because of the 8 bones. Again, I looked up recipes and the images still don't resemble what I have. (The bones don't look the same)

My rack has 8 flat, but wide 2in bones, and I don't think it has a very meaty top. They're about 1.5in tall.

We probably overpaid for whatever this is, but no use crying over spilled milk. I just need to know what I'm working with so I don't botch the cook.

Can anyone identify what these are? TIA
