AMERICAN BEEF and LOCAL FARMS

Everybody is talking about the importing of beef. Let me clarify, they are importing “lean trim”, not whole sides of beef to be cut into steaks and roast. What they are importing will be ground into burger. Why does that matter? IF the price goes down, it should start with ground beef. There may be a slight reduction of cut meat prices, as a ripple effect.
Where does the beef come from in the freezer at Market 1911? Our barn across the street.
