We have three bags of soup asparagus available. One is in the cooler today.

We will have some asparagus this weekend. The peak has passed, and we are down to about 10 a day now. We still have rhubarb available for order. We only pick to fill orders; drive-ups are welcome.

Neat clouds and a double rainbow at sundown. The rainbow was so big and close that I could only get a picture of part of it.

We have some soup asparagus available at the house for $5 per 2 .

Asparagus Soup

2 # asparagus
½ Onion – size to taste
2 carrots
1 heaping tsp corn starch
2 cans chicken broth
1/2 cup heavy cream
S & P to taste

Remove tips from asparagus, set aside. Cut the rest into chunks of 2-3 inches. Cook separately in some water until tender. Put in a blender and puree with the chicken broth.

Put the onion and carrots in the food processor to chop up. Sauté all in olive oil until soft.

Put all items in the pot with the remaining chicken broth (except asparagus tips). Simmer until cooked. Add corn starch to thicken. Salt and pepper to taste*. Add asparagus tips. Cook 3 more minutes. (*Note salt is in chicken broth!)

Last, mix in a ½ cup of heavy cream just before serving. If freezing, leave out the cream. Add when you thaw it out to eat.

We are all caught up on orders, so we should have asparagus in the cooler or in the house for the weekend. If you would like to order, we keep it in the house for you to pick up. If you have size preferences, extra small, small, medium, large, or extra large for grilling, let me know. Please call. The picture is of the extra smalls. We have requests for them from individuals who like eating it raw for snacks. It tastes a lot like fresh peas.

Our first good asparagus harvest for the year. 90 degrees has jump-started the grass to grow. 25 lbs this morning. I also noted a migrating house had rolled into the parking lot at the church.
