Purslane Summer Salad!!

Purslane is everywhere during summer! Check your backyard, you might just find some! This year's abundance is the perfect excuse to get creative!
I mixed the chopped purslane with cucumbers, red bell peppers, tomatoes, red onion, black beans, avocado, olive oil, lemon juice, and TJ's green goddess seasoning - so good!

Purslane is a succulent with many uses: raw, cooked, pickled... Rich in Omega 3s, calcium, vitamins A, B, C, protein, and more! Medicinally, it may treat urinary and digestive issues.

⚠️Pregnant 🤰individuals should avoid purslane, as it may cause contractions.

Check out this small wheat harvest from the other day! I planted these about 4 years ago, although not in this exact spot 😂. Still, it's amazing to see them finally grow! I think it's Triticum Durum, typically used for pasta, but I'm not entirely sure which variety I planted back then. I do think pasta will be a good option to make with this wheat, but I am open to suggestions 😃 Stay tuned to see how this venture continues!

Apple picking during my visit to Idaho!

Just the smell of the apple orchards was amazing and the taste of these apples are incredible!! Such a fun experience. I totally recommend and would do again!
