100 Bowls of Soup makes fresh soup and bone broth weekly from local and organic ingredients. A variety of soups and broths are available for sale at our Herndon kitchen and retail store. Our soups and broth are also sold at several retail stores in Northern Virginia, including MOM's Organic Markets in Herndon, Merrifield and Arlington, The Organic Butcher of McLean, Maple Avenue Market in Vienna and The Local Market in Falls Church. In Maryland, soup and broth are sold at MOM's Organic Markets in Rockville, Waldorf, Bowie, Baltimore and White Marsh. Chicken broth is available through Polyface Yum buying clubs. For delivery of soup and broth to your doorstep, purchase online through Hometown Harvest or Washington's Green Grocer.

We love this Green Broth Smoothie recipe, made with our bone broth and all fresh ingredients! You can create variations based on whatever herbs and greens you have. Add more or less lemon juice and olive oil depending on your preference. Drink it warm or cold.
Green Smoothie Recipe:
Using a blender, add two handfuls (or more) of spinach, arugula, or chard, a small handful of your favorite herb (we love tarragon when it's in season), 1 to 2 Tablespoons of Lemon Juice, 1 to 2 Tablespoons Olive Oil and a pinch of salt. Heat 2 cups of bone broth and add to blender. Puree 10-15 seconds. Enjoy! Can also be refrigerated and consumed the next day.

Hey Home Chefs! Our Turkey Bone Broth is simmered overnight with onions, carrots and celery creating a savory base for your home creations!
Our vegan Restorative Mineral Broth is the base for this delicious Detox Soup (see recipe below), made by Cindy Santa Ana, the culinary nutritionist who teaches classes in our kitchen. This broth is based on a recipe from Rebecca Katz. In addition to root vegetables, it contains shiitake mushrooms, sweet potatoes and kombu (seaweed) giving it added vitamins, minerals and flavor.
Detox Soup Recipe:
In a medium pot, bring 1 Quart of Restorative Broth to a boil. Add 4 cups roughly chopped broccoli, 4 cups roughly chopped cauliflower, a pinch of salt, 1/2 tsp thyme and 2 T apple cider vinegar. Cover and cook over medium heat for 7 to 10 minutes, until vegetables become tender. Turn off heat, add 1 tsp turmeric and blend with an immersion blender. Season with salt and pepper and a drizzle of olive oil.

We're really excited about our newest creation, a cauliflower dressing we use in our new potato and green bean salad. Chef Kim discovered that sauteing cauliflower stems until tender in olive with a little garlic and pureeing them in a blender with olive oil, lemon, vinegar and some herbs, makes a delicious, nourishing and "creamy" vegan dressing or dip. Move over ranch dressing!
Whether you call it broth or stock, the important thing is how it's made. For our Chicken Bone Broth we use a combination of bones and meat (chicken backs and chicken feet), slowly simmered overnight with filtered water, cider vinegar, organic root vegetables and aromatics. Our Bison and Beef Bone Broths are also simmered overnight and made with a combination of marrow, meat and knuckle bones along with filtered water, cider vinegar, organic root vegetables and aromatics. We use only meat and bones from pastured chicken and grass fed bison/beef. We don't add any salt.

This week a customer stopped by our Herndon kitchen looking for French Onion soup. We were sold out, but I explained to her how easy this soup was to make. The secret is great broth (Beef, Chicken, Bison or Mushroom) and the patience to allow onions to caramelize. It's that simple! She bought some of our beef bone broth to give it a try. Recipe below.
French Onion Soup:
In a medium sized pot heat, 2 T of olive oil over medium heat. Add 2 large or 3 medium thinly sliced onions. Stir to coat and allow onions to caramelize in the pot, stirring every 7 minutes or so for 20 to 30 minutes. (I like to set a timer.) Add 2 quarts of broth, bring to a simmer and cook for 5 minutes. Turn off heat and season with salt and pepper. Serve with or without a crusty slice of bread and melted Gruyere cheese.
Asparagus Tarragon is here! What a wonderful spring surprise, to see local organic asparagus on the availability list of our supplier, Tuscarora Organic Growers Coop! Our Asparagus Tarragon soup is truly a labor of love. We blanch the tender tips and use the remaining stalk in a simple puree, adding a large bouquet of fresh tarragon and lemon juice. The tips are then added back to the puree to be enjoyed as a burst of flavor and texture in every spoonful. A light, delicious and refreshing soup, served cold or warm.

Thanks to a partnership with Whiffletree Farm, we are able to compost more of our vegetable scraps each week! Whiffletree supplies us with locally raised pastured meats, and 100 Bowls supplies Whiffletree with leftover veggie trimmings and peelings to feed their growing piglets! If only composting at home were this easy!
