We recently received a comment suggesting that our prime rib display was in violation of health code regulations. Since food safety is something we take very seriously, we thought we'd clear up the confusion.
According to FDA Food Code § 3-302.11(A), raw and ready-to-eat products must be protected from cross-contamination during display. This is accomplished through proper separation, including separate trays and physical barriers. As shown in the video we previously posted, our display was set up in compliance with those requirements.
At Barner's Butcher Block, we don't guess when it comes to food safety. We follow the regulations, work closely with our inspectors, and take pride in doing things the right way.
If anyone ever has a question or concern, we encourage you to reach out directly. We're always happy to explain our processes, address concerns, and review the regulations together.
That said, in the spirit of customer service and avoiding future confusion, we've also added a protective cover to the prime rib display. Was it required? No. Does it hurt anything? Also no.
