Ever wonder why ham became a holiday tradition?

Long before refrigeration, families preserved pork through salting, curing, and smoking. What began as a practical way to make food last eventually became part of winter feasts and holiday gatherings.

Funny how something born out of necessity can become a tradition families look forward to year after year.

And speaking of ham, we're bringing something special to the table this season.

Smoked boneless hams from Prairie Farmstead in Sherman, Texas, where Chuck Trowbridge raises heritage pork on pasture.

Fully cooked, easy to slice, and ready for the family table.

Meet Mike and Connie Hale.

They started Windy Meadows Family Farm in Campbell, Texas, in 2001 because they wanted truly good chicken for their own family.

What began at home grew into a family farm, and their children grew up alongside the work.

Over the years, several have remained involved in caring for the birds, processing poultry, serving customers, and carrying the farm forward.

This is the part of food we never want to lose.

Before there was a turkey on a Thanksgiving table, there were people feeding birds, watching the weather, making decisions, doing the work, and taking responsibility for what left their farm.

Before the product, there was a person.

That is why knowing the farmer matters.

There are meals we eat and forget.

And then there are meals that seem to become part of the family.

Thanksgiving is often one of them.

The same dishes come back. People find their usual seats. Someone carves the turkey. Someone says the prayer. The kids get older, but somehow parts of the day stay exactly the same.

The food is only one piece of it.

But food has a way of carrying people and places with it.

Before the turkey reaches your family’s table, there was another family doing the work to raise it.

That connection is one of the things we hope never disappears from the meal.

“Pasture-raised.”
“Non-GMO.”
“No corn.”
“No soy.”

Those things tell us something.

But they still leave some important questions.

Who raised the animal?

How was it cared for?

Who made the decisions when something changed?

Who takes responsibility for the food leaving the farm?

That is why knowing the farmer matters to us.

With our Thanksgiving turkeys from Windy Meadows Family Farm, there are real people behind the answers.

When we say these Thanksgiving turkeys are pasture-raised, we mean the birds are raised outdoors on pasture.

Windy Meadows also provides supplemental feed that is non-GMO, corn-free, and soy-free.

Those details may look like a short list on a label, but each one represents a decision somebody had to make before the food ever reached a kitchen.

That is one reason we spend so much time learning how our farm partners raise their animals—not simply what ends up written on the package.

Thanksgiving morning gets most of the attention.

But the turkey at the center of the table began months earlier.

At Windy Meadows Family Farm in Campbell, Texas, they are raising these birds outdoors on pasture long before anyone is setting plates, making gravy, or deciding who gets to carve.

There is feeding to do. Birds to watch. Weather to work around. Decisions to make every day.

That part of the meal usually goes unseen.

We think it is worth remembering.

Years from now, our children probably won’t remember every dish that was served at Thanksgiving.

But they may remember who carved the turkey. Who sat beside them. The prayer that was said. The stories everyone had heard before but still told again. The things their family did the same way every year.

Those ordinary things have a way of becoming tradition.

We just think the food at the center of that table should have a story worth knowing too.

Food was never meant to be anonymous.

There was a time when knowing where your food came from wasn't unusual.

You knew who raised the chickens. Who milked the cows. Who tended the pasture. You knew the hands behind what eventually found its way to your table.

Somewhere along the way, much of that relationship disappeared.

Food became a package. A label. A list of claims.

And while labels can tell us something, they can never tell us everything.

We want to know more.

Who raised it? How were the animals cared for? What were they fed? How was the land treated? And who was making those decisions when nobody was watching?

That is why ROCK Farmhouse works directly with independent Texas farmers we can actually know.

We believe there should be fewer degrees of separation between the people raising our food and the families eating it.

For families across North Texas and Dallas Fort Worth looking for honestly sourced farm food, that relationship is where trust begins.

The ordinary meals that somehow become childhood.

Most of the meals our children remember will never feel important while we are making them.

Eggs in the skillet before the day begins.
Milk poured at the counter.
Sourdough toasted beside breakfast.
A child standing nearby, watching, helping, asking questions.

Just ordinary mornings.

But somewhere along the way, those ordinary meals become part of what home felt like.

That is one reason we care so much about where our food comes from.

Yes, nourishment matters. How animals were raised matters. What they were fed matters. The farmer and the land matter.

But food also becomes tradition, memory, family culture, and the small rhythms our children may carry with them long after they leave our table.

At ROCK Farmhouse, we connect families throughout North Texas and Dallas Fort Worth with honestly sourced food from trusted Texas farmers and producers.

Not simply because we want better ingredients.

Because we believe the food we bring home becomes part of the life we are building there.

A label can tell you something. It can’t tell you everything.

This carton actually tells us quite a bit.

Pasture raised. Fed grass, bugs, and non GMO feed. Soy and corn free. Raised in Sherman, Texas.

Those details matter. We want to know them.

But a label still cannot tell you about the person waking up every morning to do the work. It cannot show you how closely they watch their animals, how they respond when something goes wrong, how they care for the land, or why they chose to farm this way in the first place.

That is why we believe good sourcing requires more than finding the right words on a package.

We want to know the farmer behind them.

At ROCK Farmhouse, we work with Texas farmers and producers like Prairie Farmstead because we want families across North Texas and Dallas Fort Worth to have something increasingly difficult to find in our food system: a real relationship with the people behind their food.

Labels matter.

But trust goes deeper.

Know your farmer. Honor the food. Gather the family.
