Greetings Olive Our Best Friends

We wanted to let you know that the first Northern Hemisphere Extra Virgin Olive Oil from the Fall of 2025 Crush has arrived, and it is a high phenol(anti-oxidant) and oleocanthal powerhouse. This limited Robust Crush from Portugal has a whopping 924ppm biophenol level. It has quite the pop on the backend due to the high oleocanthal level, but this is a fabulous robust extra virgin olive oil for those folks who take a table spoon or two a day. This is a limited offering, as each store was only able to obtain 2 tanks of this offering. It will go quick, so stop in soon if you would like to purchase some of this very high phenol/oleocanthal EVOO from Portugal.

Oct and Nov are the months in which the Northern Hemisphere countries create their liquid green gold(olive oil). We visited the largest exporter of Olive Oil in the world(Spain) last October in order to learn more about the olive oil making process. The Mill we visited was about 30 minutes West of Malaga, Spain. The Mill basically only produces olive oil from Oct to mid Dec. The Mill is idle Jan through Sept as the new crop of Olives grow on the trees. In Southern Spain, the Hojiblanca olive is the prominent variety. The company that owned the Mill will also crush the olives of local farmers and citizens with olive trees on their property. It does not matter whether they have 2 olives trees in their yard, or a small grove of 400 trees, they can bring their harvest in to be crushed. The customer pays a fee based on the number of kilograms of olive oil produced and the size/number of bottles used in the bottling process(notice the 5 liter containers are plastic. Dark Glass is what is preferred to protect the olive oil from light, but due to cost and massive amount of olive oil consumed, plastic bottles are filled and stored in a dark area). The customer has to sign an agreement that states that they are using the olive oil the Mill pressed for their own personal consumption. They will not attempt to sell the olive oil on the open market, as it would create competition for the Mill's own Olive Oil products that they produce. We saw the crush process in which the "stones' are used to create the olive oil in the traditional style, but in today's world of technology, most Mills are using a more mechanical process because it allows them to better control the heat and oxygen levels during the malaxation process, which improves the yield and quality of the olive oil. We hope you enjoy some pictures we captured of the process of the locals obtaining their olive oil from their small harvest.

UNDERSTANDING POLYPHENOLS IN BALSAMIC VINEGAR
A New Look at What’s Inside the Barrel
You may already know that polyphenols – the antioxidant compounds naturally present in fruits and vegetables – are part of what makes high-quality extra virgin olive oil so beneficial. But what many don’t realize is that balsamic vinegar also contains polyphenols.

As we continue to raise the bar on product transparency and education, we’re proud to begin testing and sharing polyphenol content in our balsamic vinegars

What Are Polyphenols?
Polyphenols are plant-based compounds known for their antioxidant and anti-inflammatory properties. In the products we consume, polyphenols contribute to flavor, aroma, color, and shelf stability – but more importantly, they offer a wide range of health-supporting benefits.

Why Do Polyphenols Matter?
Antioxidant activity – neutralizing free radicals that contribute to aging and cell damage

Digestive health – promoting a healthy gut environment

Glycemic support – helping slow the absorption of sugars

Cardiovascular wellness – supporting healthy circulation and inflammation balance

Our current Balsamic Vinegars focus is on:

Traditional
