Happy ! We just stocked the case for the week, and have a couple special flavors. First, in honor of this weekend, we rolled out our black truffle sausage.

Second, it's Cider Week beginning May 8, so this week and next, we're featuring some sausages made with Michigan Cider. This week, we took Sierra Rose Raspberry Hard Cider, and combined it with fresh ginger and Red Hot Raspberry jam to create a sweet, fruity pork sausage.

Join us Friday, May 15, for our final wine dinner before our summer event hiatus! We'll be celebrating the seasonal, foraged, ingredients Michigan has to offer, complemented with Italian wines, courtesy of David DuBou and Indigenous Selections.

Founded in 2006 by winemaker Giorgio Rivetti, Indigenous Selections represents a collection of hand-selected wineries crafting the finest and most authentic representations of what Italy has to offer. David DuBou currently serves as their Director of Sales and Education, and has spent the last 25 years traveling much of the world, studying and collaborating with iconic winemakers and Master Sommeliers.

To highlight our local, seasonal, produce, as well as the wines, we've prepared a five-course menu for the evening:

Amuse: Goat Cheese Tart
Wine Pairing: Indigenous Prosecco (with the option of making it a spritz)

Antipasta: Spring peas, sugar snap peas, asparagus, coppa ham, dill-garlic yogurt & radish dipped in herbed butter
Wine Pairing: Cottanera Enta Rosado; Sicily, Italy

Primo: Asparagus cannellone over a garlic scape risotto
Wine Pairing: Santa Barbara Verdicchio Vaglie; Marche, Italy

Secondo: Grilled, grass-fed bavette with chimichurri, blackened rapini, potato pave & morel mushrooms
Wine Pairing: Rocco del Principe Taurasi "Aurelia"; Campania, Italy

Dolce: Rhubarb Tarte Tatin
Served with a berry coulis
Wine Pairing: Tenuta Santa Maria Ricioto Valpolicella; Veneto, Italy
