Our family has been fishing halibut for decades, starting back when Jim was a kid. Throughout this time, our process hasn't changed.
For each fish that we harvest, we remove the hook and bleed it. Once that's done, we remove the guts, scrape the bloodline, cut out the soft tissue, and remove the gills. Doing these extra steps preserves the flavor and freshness of the meat, and is one of the reasons our fish never tastes "fishy."
The properly cleaned fish is then rinsed a second time and moved to our fish hold, which is filled with clean ocean water and slush ice, and maintains a temperature of 32-36°F due to the salt and ice.
This is our process, pure and simple. We treat every fish we catch like it will feed our family, because in some ways you are. After all, we wouldn't be doing this without you.
Thank you for being part of our small Alaskan fishing family business.
