Wednesday Summer Treat

How can you go wrong with red potatoes, bacon, and cheese? You can’t! We kicked this recipe up a notch by adding chicken and turned it into a scrumptious one dish wonder! Prep time is about 15 min. and cook time is 55 min. but this melt in your mouth meal is absolutely too delish not to pass on!

Loaded Potato and Chicken Casserole
• 1 1/2 pounds boneless skinless chicken breasts cut into 1 inch pieces
• 2 - 3 pounds red potatoes diced into 1 inch pieces
• 3 - 4 Tablespoons olive oil
• 1/2 Tablespoon paprika
• 1 Tablespoon garlic powder
• Salt and pepper to taste
• 2 - 3 Tablespoons hot sauce/Texas Pete (optional for a Buffalo style taste)
• 2 cups shredded cheddar cheese or cheese blend (I like the cheddar/Monterey Jack blend, there’s really no wrong when it comes to cheese)
• 1/2 cup cooked and crumbled bacon
• 2 green onions sliced thin
• Dollops of sour cream (optional)

Grease a 9×13 pyrex with non-stick spray. Spread the diced chicken and potatoes evenly into baking dish. In a large bowl, whisk together the olive oil, paprika, garlic powder, salt and pepper. Pour mixture evenly over the chicken and potatoes. Stir to coat. Bake uncovered at 400 for 50 min. (you may want to give it a stir half way thru cooking). Remove from oven and sprinkle evenly with cheese, chopped bacon, and onion. Bake another 5 min. or until cheese is melted. Add sour cream to the top (or not) and serve.

The Town Board of Commissioners voted last night to raise property taxes by another $0.02, water and sewer rates by 15%, and sanitation rates as well. Wake County Commissioners also voted to increase taxes by another $0.02.

It’s time for change. These officials need to be voted out.

A fine candidate and a man I’ve known and respected for many years, John Adcock, is running for County Commissioner. I strongly encourage everyone to support him.

We at Holland Produce have made it a rule for years to stay out of politics. We believe politics and business usually don’t mix well. However, as a believer who values truth and transparency in government , I can no longer stay silent.

This town is out of control. Not every new development needs to be high-density. Not every tree needs to be cut down. Not every green space needs to be paved over or have ball fields built in them . And with the significant growth in our tax base over the last 10 years, our taxes should not require constant increases.

We need term limits and new leadership. Right now, the tail is wagging the dog.

If speaking out costs me business, so be it. I love Fuquay-Varina and the residents both longtime and new but I can’t sit back and watch what’s happening any longer. The next municipal election is still a ways off — let’s hope they don’t do too much damage before then.

One last note: It’s not a “dash” It’s a hyphen.

Anyone who had Mrs. Tilley as a English teacher knows we’re one of only two towns in North Carolina with a hyphen in its name. A dash divides and the current Town Administration is living up to that marketing . A hyphen joins together. We should get that right. I sure miss Mrs. Tilley — we need her kind of common sense now more than ever.

The Town Budget Meeting wrapped up at 9:45 last night. I scheduled to pick up Peaches in Raleigh at 4:30. I had to meet and direct location setup with Bright Beans Coffee at 6:45 at the Old Barn, and they will be here until noon. Is it the weekend yet? The produce stand opens at 11, and coffee is available now. ☕️
