Wednesday Summer Treat
How can you go wrong with red potatoes, bacon, and cheese? You can’t! We kicked this recipe up a notch by adding chicken and turned it into a scrumptious one dish wonder! Prep time is about 15 min. and cook time is 55 min. but this melt in your mouth meal is absolutely too delish not to pass on!
Loaded Potato and Chicken Casserole
• 1 1/2 pounds boneless skinless chicken breasts cut into 1 inch pieces
• 2 - 3 pounds red potatoes diced into 1 inch pieces
• 3 - 4 Tablespoons olive oil
• 1/2 Tablespoon paprika
• 1 Tablespoon garlic powder
• Salt and pepper to taste
• 2 - 3 Tablespoons hot sauce/Texas Pete (optional for a Buffalo style taste)
• 2 cups shredded cheddar cheese or cheese blend (I like the cheddar/Monterey Jack blend, there’s really no wrong when it comes to cheese)
• 1/2 cup cooked and crumbled bacon
• 2 green onions sliced thin
• Dollops of sour cream (optional)
Grease a 9×13 pyrex with non-stick spray. Spread the diced chicken and potatoes evenly into baking dish. In a large bowl, whisk together the olive oil, paprika, garlic powder, salt and pepper. Pour mixture evenly over the chicken and potatoes. Stir to coat. Bake uncovered at 400 for 50 min. (you may want to give it a stir half way thru cooking). Remove from oven and sprinkle evenly with cheese, chopped bacon, and onion. Bake another 5 min. or until cheese is melted. Add sour cream to the top (or not) and serve.
