The substance at the bottom of the honey jar is crystallized honey. This change is a natural process that occurs in pure, raw honey and does not mean the honey has gone bad.
What it is: Crystallization is the process where the glucose separates from the water in the honey and forms crystals. The honey becomes thicker, grainier, and lighter in color.
Why it happens: Crystallization occurs more quickly in raw, unfiltered honey because it contains particles like pollen that act as a base for the crystals to form. The type of nectar the bees collected also influences how quickly the honey crystallizes.
How to fix it: If you prefer the honey in its liquid state, you can gently heat the jar in a pot of warm water until the crystals dissolve #559
