Saturday sample highlight: Union Star Espoir🧀

This is a new arrival this summer, a soft rind cheese that has been washed in brandy. Inspired by the French Epoisses, this is a delicious Wisconsin take on the classic stinky French cheese.

This cheese is creamy and rich, and gets funkier as it ripens. The top notes or fruit and cream make for a melt in your mouth texture that only gets better with age.🧀

Wednesday sample highlight: Curds in a Cloud🧀☁️

This is a specialty Wisconsin cheese that is made by embedding cheese curds into wheels of muenster. 🧀☁️

It has a smooth, creamy flavour, and the appearance resembles a fluffy cloud with cheese curds suspended in it, which is how it gets the famous name.🧀

This cheese is wonderful for enjoying on a sandwhich, snacking on with summer sausage, or using for a multi-colored grilled cheese. 💛🍞 ☁️

Friday sample highlight: Marble Cheese🧀🤍🧡

If you were born and raised in Wisconsin then this is a familiar face among the cheeses here. Made from Colby and Monterey Jack swirled together and then pressed into forms, it creates the classic marbling effect, earning the same name.

Ideal for snacking on with some summer sausage on a hot summer night, this Wisconsin classic is timeless for good reason.

Saturday sample: The Dry Jack🧀

Nicknamed the ‘American Parmesan’, this is our take on the classic aged Monterey Jack.

Rubbed in olive oil and salt, and then open air cured for 90 days, this cheese is similar to a young parmesan. As such, it grates beautifully, and is suitable for both snacking on or cooking with.

One example of how I like to use it is in a bacon and cannelini bean pasta. Once the bacon, garlic and onions are cooked down and caramelised, I like to add a splash of cream and a generous pile of grated dry jack into the pan to thicken the sauce. This works well for soups too.

Monday Sample Highlight: 10 Year Aged Cheddar🧀

Friday sample highlight: Red Onion Cheddar 🧅

This is one of Union Star’s best flavored cheddars for the summertime, the fresh minced red onion is added to the cheddar curd, so the flavour is robust but not overpowering.
