Not all beef fat is the same. Suet (the hard fat around the kidneys) renders into the cleanest, firmest, mildest tallow you can get.

It’s highly stable under high heat. Roughly 50% saturated, mostly monounsaturated oleic acid, and very little fragile polyunsaturated fat. That means it holds up for searing and frying without breaking down the way high-PUFA seed oils do.

It also contains stearic acid, which behaves more neutrally than other saturated fats, plus better nutrient density when it comes from grass-fed animals (more CLA, vitamins, and a better omega ratio).

Simple, traditional, reusable, and made from the whole animal. One of the best everyday cooking fats if you care about stability and quality over industrial processing.

Before they sold milk, Sarah Jo’s family raised and showed dairy cattle. The cows still needed milking, and she hated seeing that milk go to waste.

“I’m really happy that now we can do something with the milk.”

The Thrivestock Ranch Pastured raised hens have slowed down a little bit with the heat! We are hoping they will be back to laying full production soon! Keep following for when we have more eggs available in Frisco!
