On special this weekend we have O’Banon from 🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐🐐
O’Banon is a riff on the classic French goat cheese Banon. Both are fresh chèvre wrapped in chestnut leaves, but cheesemaker, extraordinaire, Judy Schad takes O’Banon and puts a Kentuckiana spin on it by soaking the leaves in Kentucky Bourbon instead of eau-de-vie. The result is a fresh chèvre with lots of character. Its texture is dense, clay-like, and smooth. The leaves lend tannic, herbaceous notes to the flavor, which finishes with a hint of vanilla from the Kentucky Bourbon.

🇬🇧SHIPMENT ALERT! 🧀
We just received some of our favorite British cheeses from Neal’s Yard Dairy. Handmade cheese varies from batch to batch due to season, milking cycle, and the animal’s diet. Cheesemakers work with the milk they have and constantly adjust their recipes to match changes in components like fat and protein. It is different every time they set out to make a batch of cheese.

Neal’s Yard Dairy travels the countryside and selects cheese from each of its producers. They taste different batches and choose the ones they like that will travel well by boat to us. Every week, we receive the tasting notes from their team. We pore over those notes, decide what sounds tasty to us and what we think our customers will like, and then make the selections. Our relationship with NYD, the batches, and their tasting are critical steps in our process to bring you great cheese. Come see us in the shops soon and ask about our newest arrivals.
