This Week at Homestead Meats (Oct. 20–25)

It's that brief stretch of October when five major professional sports leagues are in action. Men's basketball is kicking off its season, football and hockey are underway, women's basketball is in the Finals, and baseball is heading into the World Series.

And speaking of fall sports, who says bratwurst season has to end with summer? We found ourselves inspired to make another batch of Sketchbook B**r Brats and Cheddar Brats, available Thursday.

We're adding a new item to the lineup: Mediterranean Pulled Pork, flavored with tomatoes, lemon, rosemary, green olives and a touch of sumac.

It started as a dish for the Evanston W**e Walk last month, and people liked it enough that we decided it was a keeper. Here, it’s shown served in a pita and dressed with tahini, but it also works well with rice, noodles, potatoes, veggies or tacos.

As the days get shorter and darker, it seemed like a good time for something with a little brightness to it.

Sausages available now include Lyon Truffle Pistachio, Breakfast Brats, Pork Breakfast Patties, Romanian Kosher All-Beef Hot Dogs, Beef/Lamb Turkish Kabab and Smoked Andouille.

Like our sliced smoked bacon? Now we're offering another form: Diced Bacon.

These eight-ounce packs of bacon cubes have so many fun uses. Fry them up and add them to almost any savory dish that could use a little something extra: baked potatoes, salads, eggs, omelets, mac & cheese, soups and so much more.

And do save the rendered fat. You can use it to sauté almost anything, adding a warm, smoky flavor to your dishes. Perfect for this time of year.

A quick note about corned beef and pastrami: The Jewish High Holidays mean we sell a lot of brisket, which puts us a little behind on our corned beef and pastrami production. It takes a couple of weeks to get caught up, so please bear with us while we get restocked.

We're adding a new cheese to our small and carefully chosen selection: Zingerman’s Manchester Cheese.

For anyone with roots or connections in southeast Michigan, the name Zingerman’s needs no introduction.

Manchester is a mold-ripened, double-cream cow’s milk cheese. It has a thin, wrinkled rind and ripens from the outside in, becoming softer and creamier as it ages.

What also caught our attention was the great backstory. Cheesemaker Aubrey Thomason, who started at Zingerman's as a deli staffer at age 17, spent years working on the Manchester, changing and refining the process hundreds of times to get the cheese where she wanted it. We can relate to having a hard time leaving something alone when you know it can still be better!

Let it come to room temperature before eating and enjoy!
