Prairie Center Meats Your source for locally produced beef, pork, chicken, lamb and eggs. As local farmers, we appreciate the need for quality, responsibly raised foods.

Our on-farm market has meats, honey, soap and lotion, cheeses and other products from local farmers. We have created Prairie Center Meats as a way to market the products we raise on our farm in Edgerton KS to local customers. Our farm is open for visitors and we are available to answer any questions you have about any of our products. Try our products and taste the difference local makes.

Chad wanted me to play a mean trick on you and just post the moving container with something about us giving up and moving. Not saying we don’t feel that way sometimes (like 8:00 this morning), but that’s not why it’s all in the driveway! Please excuse our mess as we FINALLY are making progress towards putting our kitchen back together. We have cabinets and countertops. Next week is plumbing and flooring, followed by painting the next week. We will be in total chaos for about a week then we will start putting life back together. At last.

Pulled pork does not require a smoker and lots of complicated steps. Our favorite pulled pork is oven-roasted and delicious! I start with one of our Boston Butt roasts and cover it with our Pork Rub the night before. When it’s time to cook, I add about 2 cups water to the pan, cover it with double layer of foil and bake at 325 degrees for 3-4 hours, or until the roast reads 210 degrees. Let it cool about 30 minutes then shred with forks. We use our homemade BBQ sauce and skip the buns usually, but it makes great sandwiches as well. I served this with some of our locally raised green beans for dinner. This is such an easy dinner and would make great leftovers - unless you eat it all at once like we tend to do!

We have three farm heroes from Saturday that I want to acknowledge.

First award goes to Julie, who not only faithfully executed her duties as shop keeper on Saturday while we were gone, but got to step in as sheep wrangler when the sheep got out - several times. She managed to carry out my job and Chad’s with grace and aplomb in the midst of chaos. Thank you, Julie.

The second round of hero awards goes to Minnie and Moo. When we were two hours from home and no one was here to help, we got a call that the sheep were out yet again, but the white dogs appeared to be keeping them back by the barn. When we finally arrived home after dark, Minnie and Moo came sauntering towards the car, with themselves marking the space between us and the sheep who were huddled together back at the barn. I think those two dogs kept the sheep at bay for two hours! That is phenomenal farm work.

So thank you to all of our helpers that allowed us to attend a 4H event with Jack. Hopefully future “days off” for us aren’t quite as full of adventure!

It promises to be a beautiful day! Come share part of it with us and get your locally produced provisions for the week.

The seasonal clock is ticking on your chances to get real local produce. We have a beautiful selection for tomorrow including radishes, mustard greens and a variety of mushrooms. We even have Hen of the Woods mushrooms, also known as maitake. Personally, I can’t wait to use some of these next week! Maybe a mushroom, green bean and beef stir fry? 🤔 Open tomorrow 9-3. We can’t wait to see you!

Today I turned a package of Osso Bucco cut beef shanks into delicious beef stew! After getting everything in to the pot, it went into the oven to do its thing while we did other things. It was so good, and I hesitate to confess that we ate nearly the entire pot. 😬

This is what happens when pigs get out in the yard. Those snouts are something else. Good thing there isn’t an HOA to get on us for the condition of our yard!
