Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes, plus time to marinate
Yield: 4 servings
Marinade Ingredients:
1 ½ lbs. boneless, skinless drumstick medallions cut into 1” pieces
2 tsp. grated ginger
2 cloves garlic, grated
2 Tbsp. all-purpose flour
½ tsp. salt
2 egg whites
Sauce Ingredients:
¼ cup low-sodium soy sauce
2 Tbsp. brown sugar
2 Tbsp. rice vinegar
2 Tbsp. ketchup
½ - 1 tsp. crushed red pepper flakes
2 tsp. cornstarch
2 tsp. sesame oil
½ cup water
Remaining Ingredients:
1 ½ cups all-purpose flour
½ tsp. baking powder
½ tsp. salt
1 Tbsp. cooking oil, plus extra for brushing
2 cloves garlic, grated
1 Tbsp. ginger, grated
6 dried red chilies
½ red bell pepper, diced
Serve with: fresh herbs, sesame seeds and rice
Directions:
1. Marinate chicken: Whisk all marinade ingredients, except the chicken, in a large bowl until well combined. Add the chicken to the bowl and stir to coat. Refrigerate for at least 30 minutes.
2. Make sauce: Combine all sauce ingredients in a medium bowl and set aside.
3. Dredge chicken: add 1 ½ cups all-purpose flower, baking powder, and salt to a pie plate or similar dish. Whisk well. Add chicken in batches to the pie plate and use your hands to coat each piece of chicken. Place on a clean plate
4. Air fry chicken: Preheat air fryer to 350° F. Add chicken to the basket, ensuring each piece has enough space to receive air flow around it. Depending on the size of your air fryer, this may need to be done in batches. Brush each piece of chicken with oil, then cook for 8 minutes. Flip over, brush with oil and cook for another 6-8 minutes. Flip and continue cooking for another 2-3 minutes or until crispy.
5. Stir fry: Heat one tablespoon of oil in a large skillet or wok. Add the 2 cloves of grated garlic and 1 Tbsp. grated ginger and stir fry for 30 seconds. Add the chilies and red bell pepper and cook for another minute. Add the prepared sauce and mix well, stirring constantly for 2-3 minutes, until thickened. Add the crisped chicken and toss to coat. Cook for another 1-2 minutes and remove from heat.
6. Garnish with fresh herbs and sesame seeds, if desired, and serve over rice.
