We’re closing out in the kitchen with a recipe from North Carolina Sea Grant’s Mariner’s Menu: Baked Oysters with Garlic Butter. Garlic, herbs, breadcrumbs and Parmesan give a tray of oysters a good reason to head for the oven. Save this one for your next oyster night.

Find the recipe through the link in our bio. What’s your favorite way to cook NC oysters?

The spots are running. Along the North Carolina coast, those words have long meant fall fish fries, folks around a table and a mess of small fish cooked the same way as long as anyone can remember - FRIED HARD. Headed, gutted, scored, rolled in cornmeal and fried whole, until the fins and skin turn crisp and the meat pulls cleanly from the bone. Sure there are other ways to prepare them, but this is one way you can't go wrong with. They’re catching them off the beach in Hatteras and we’ll have a good mess for the weekend.

Good for dinner, easy on the wallet, and harvesting them helps manage an invasive species in our own backyard. Meet NC Blue Catfish. Blue Catfish are an invasive species in the Albemarle Sound and its surrounding rivers, where they've established large populations and compete with native fish for food and habitat. They're a real concern for our coastal ecosystems, but they're also some seriously good eating. Not to mention probably the most affordable fish we offer.

With mild, sweet flavor and firm, flaky white meat, Blue Catfish are great fried, blackened, or grilled. And unlike many of our seasonal NC fish, they're harvested year-round, making them one of the most consistently available options we carry.

It's with a heavy heart that we say goodbye to Dewey Hemilright, a friend and a true champion of our fishing community.

Dewey was a dear friend of mine and Locals Seafood. The kind of jovial person you always wanted to be around. He was easy to talk to and so down to earth on everything. Dewey was my go-to on lots of fishery questions and issues. He was the kind of guy that you called for a 5min conversation, and it would turn into 30min plus in the blink of an eye. He cared deeply about his community and profession, and worked tirelessly to benefit both. He was an encyclopedia of information with regards to fishery issues, and he could always explain the history of why things happened and give me the context I needed to understand it. He is going to be deeply missed by our entire industry, and his passing is just a huge loss for all of us. I feel honored for the time I had to spend with him and know him, and I'm a better person for it. The world needs more people like Dewey Hemilright.

Why do oysters grown in Hatteras taste different from oysters raised in Core Sound? Because an oyster reflects the water it grows in. Salinity, currents, available food, and growing conditions can all shape its size, texture, and flavor. Come find your favorite this . We're proud to have a large selection of oysters from up and down the North Carolina coast. Whether you're looking for smaller and extra salty or more mineral-forward and extra plump, we have an oyster to fit the bill.
