End of year update...

We had a record year!
Collected: 9800 gals of sap
Finished: 220 gals of syrup

Pints available for $12. Local pickup only.

Even more exciting, we will have Bourbon Maple Syrup available by November! We filled a freshly emptied Black Frost Distilling bourbon barrel with our maple syrup! This will sit and infuse for several months before we bottle but it will be ready by the holidays!

These memories came up from 12 years ago. Back then, we hung bags from each tap to collect the sap. When we were ready to collect, we would dump each bag into a bucket to then transfer into a closed container so we could get it back to the sugar shack. I love seeing the pictures pop up to remind us how far our process has come! It has changed a lot since then but all of those changes have given us a better product and definitely made us more efficient.

It's been a hard, crazy and fun syrup season so far! This weekend was our biggest push for production and thankfully, we had a lot of helpers! We'll post some stats at the end of the season but this is our largest production to date.

We collected another 940 gallons of sap last weekend which gave us 170 pints of syrup. We had some extra helpers too!

Our season has officially started! We collected 940 gallons of sap, put it through the RO and cooked it all in about 5 hours. Our new setup is amazing but definitely still a work in progress!

For the last year, we've been updating one of our buildings to be our new sugar shack. We've put on a new roof, renovated inside and moved our equipment in. It's been a mad dash to the end with plenty to do still but the seasons starting whether we're ready or not!

All of our trees are tapped and this week seems to be the perfect start! Stayed tuned for more updates as we get started.
