Nothing like the sound of harvesting wheat!

I’ve already eaten 3 of these 🤭
I used soft white wheat berries to make these and they turned out SO good!!

Soft White Wheat Pumpkin Chocolate Chip Cookies

* ½ cup (1 stick) butter, softened
* ½ cup brown sugar, packed
* ⅓ cup granulated sugar
* ½ cup pumpkin purée
* 1 egg yolk
* 1 tsp vanilla
* 2 cups freshly milled Soft White Wheat flour
* 1 tsp baking soda
* ½ tsp salt
* 2 tsp cinnamon
* as many chocolate chips as your heart desires

Directions

1. Grind 4-5 C of Soft White Wheat berries in a wheat grinder. Our favorite is from NutriMill
Let the freshly milled wheat sit for 10-15 minutes until cooled.
2. Preheat oven to 350°F.
3. Cream the butter, brown sugar, and granulated sugar until fluffy.
4. Mix in pumpkin, egg yolk, and vanilla.
5. Add flour, baking soda, salt, and cinnamon.
6. Mix just until combined. Add chocolate chips.
7. Let the dough rest 5–10 minutes so the freshly milled wheat can absorb the moisture.
8. Use a cookie scooper to scoop dough onto a baking sheet
9. Bake 10–12 minutes.
10. Let them sit on the baking sheet 5–10 minutes

ENJOY!! 😋
