Sweet & Spicy White Chocolate Blondies
The rich, buttery sweetness of white chocolate perfectly mellows the spicy kick of the Pineapple Jalapeño Jam.

Ingredients
⅓ cup Pineapple Jalapeño Jam
¾ cup (1.5 sticks) unsalted butter
1 cup packed light brown sugar
2 large eggs (room temperature)
1 teaspoon vanilla extract
¼ teaspoon salt
1.5 cups all-purpose flour
1 cup white chocolate chips (divided into ¾ cup and ¼ cup)
Instructions
1. Heat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
2. Melt the butter in a saucepan over medium heat. Remove from heat and whisk in the brown sugar until smooth and completely combined. Let it cool for 5 minutes so it doesn't cook the eggs.
3. Whisk the eggs, vanilla extract, and salt into the cooled butter mixture until the batter looks glossy.
4. Fold in the flour using a spatula just until combined. Do not overmix.
5. Fold in ¾ cup of the white chocolate chips.
6. Spread the thick batter evenly into your prepared baking pan. Drop spoonfuls of the Pineapple Jalapeño Jam randomly across the top of the batter. Drag a butter knife through the jam dollops to create a beautiful marbled swirl pattern.
7. Sprinkle the remaining ¼ cup of white chocolate chips over the top.
8. Bake for 22–25 minutes. The edges should be golden brown, and a toothpick inserted into the center should come out with a few moist crumbs (no wet batter).
9. Let them cool completely in the pan before lifting them out by the parchment paper to slice.
