This week we are featuring the benefits of Pea Shoot Microgreens! Pea Shoot Microgreens taste fresh, just like peas from the garden. All of the microgreen is edible, including the longer stems. I usually roughly chop mine up before adding to salads, smoothies, as a topping for sandwiches or in stir fries. They can be eaten raw or cooked. The most potent nutrients in pea shoot microgreens are vitamin C, vitamin K, folate and potassium. They can be essential in many body processes and supporting heart health, boosting the immune system and aiding in detoxification. In addition to their nutritional value, pea shoot microgreens are also a great source of fiber.
We just dropped off fresh Pea Shoot Microgreens at Four Seasons Local market (in addition to Mustard, Kale and Radish varieties). Four Seasons currently has construction going on in front of their building on S Washington Street, but they are open during normal hours! I suggest turning on Pike Street (right before Chase Bank) and I've always had good luck finding parking on either side of the street.

Pea Shoot Pesto Recipe
3 cups pea shoots
3 large cloves garlic
½ -1 lemon, juiced about 2 tablespoons
½ cup pistachios, toasted (you can sub pine nuts or walnuts)
½ cup grated parmesan cheese
2 tbsp olive oil, you can adjust the amount based on your liking
Salt, pepper to taste
Place the first 5 ingredients in a food processor and blend. Once blended, while the food processor is on, slowly pour in the olive oil. Taste as you go and add to your liking. Use the pesto right away or it will last up to 3 days in the fridge (if it lasts that long).
