A first step for this year’s Mountaineer! Our alpine-style spends the first month of its life on wire racks as we get the rind established — but to keep those rinds in good shape, only old-fashioned wood boards will do. They’ll live here, getting their weekly wash, until we’re ready to send them out in the fall. It’s a lot of work, but the results are worth it!
