This is the recipe for one of our favorite EASY Summer meals. We prefer Ground Mangalitsa Pork, but any ground pork will do. Other vegetables can be substituted in place of Summer Squash or Zucchini.
Pork Hash with Zucchini/ Summer Squash
1lb. Ground Pork
2 medium Zucchini or Squash, diced small
1/2 Medium Onion, diced small
4-6 White or Baby Bella Mushrooms, sliced
2 Garlic Cloves, chopped
1 tsp Kosher Salt
1/2 tsp Ground Black Pepper
1/2 tsp Coriander
1/4 tsp Cumin
1/2 tsp Paprika
1 tsp Garlic Powder
1/2 tsp Dried Thyme
1 tsp Dried Oregano
Heat a large saute pan on medium heat.
In a small bowl mix together Salt, Pepper, Garlic Powder, Coriander, Cumin, Paprika, Dried Thyme, and Dried Oregano.
In the large saute pan "brown" the pork, and while cooking season with HALF of seasoning mixture.
Remove ground pork from pan, leaving lard rendered from it in the pan.
Cook onions in large saute pan for several minutes until soft.
Add mushrooms, garlic, Squash/Zucchini, and remaining seasoning mixture to pan and saute for 4-5 minutes.
Add ground pork back to pan, and mix with vegetables. Cook for 1-2 minutes, adn then season to taste with additional salt if needed.
I like to serve this over rice, but it can be eaten by itself as a meal.
