ROASTED GARLIC-PARMESAN ZUCCHINI, SQUASH, And TOMATOES
Savory Roasted Garden Medley
PREP TIME: 10 minutes
COOKING TIME: 25 minutes
TOTAL TIME Time: 35 minutes
SERVINGS: 4
INGREDIENTS:
2 medium zucchinis, sliced into rounds
2 medium yellow squash, sliced into rounds
1 pint cherry tomatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
DIRECTIONS:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the zucchinis, yellow squash, and cherry tomatoes.
In a small bowl, whisk together the olive oil, garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
Pour the olive oil mixture over the vegetables and toss until evenly coated.
Spread the vegetables in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned, tossing halfway through.
Remove from the oven and transfer to a serving dish.
Garnish with chopped fresh parsley, if desired.
