What a weekend! Thank you to everyone who came out to the 45th Annual Cocoa Village Fall Art & Craft Fair and stopped by the Forgotten Block popup! ☕🌯🍔

We loved having you on the block. Seeing so many familiar faces and meeting new ones is what makes this little shop so special. ❤️

A big thank-you to the artists, makers, and everyone at Cocoa Village Main Street for putting on such a great fair, and to the neighbors who shopped small all weekend. 🛍️

Does anyone know why this got taken down? …I did have morcilla in this past week. And I’m about due for some kind of terrine.. I can make you some amazing black pudding. Just saying if you know this person, let them know I’m here 😎✌️♥️

Bavette, French for "little bib", the cut is named for its shape: wide, long and flat. It comes from the same French tradition that gave us other "butcher's cuts", these weren't sold to the general public because butchers and chefs kept them for themselves. Here's the wild part: each cow only gives us ONE Bavette. One. That's why you don't see it anywhere, there’s just not much of it to go around.

In the U.S., Bavette comes from the bottom sirloin, near the flank. It has a similar loose grain, but it's typically more tender and has richer marbling, and flavor! especially when it comes from a Wagyu animal like Suwannee River's.

Bavette from Suwannee River Wagyu is here! and chances are you've never had it.

This is one of those cuts that flies under the radar, but chefs love it for a reason. Bavette (also known as flap steak) is the same type of steak, as flank and skirt steak, plate steaks! But it's more tender, with deep, beefy flavor and beautiful marbling thanks to the Wagyu genetics.

The trick with Bavette: cook it hot and fast, let it rest, then slice thin against the grain. Do that, and you'll get one of the most flavorful steaks you've ever had.

We're one of the only places around carrying this cut, straight from Suwannee River Wagyu. Come see us and try something new.
