We just opened this wheel of KM 39! A Spanish cow’s milk cheese from Galicia, Spain, it gets its name because it’s made near the 39th kilometer of the Camino de Santiago pilgrimage route. At over 18 months old, it’s bold, nutty and zesty with a crumbly texture. If you’re looking for something to sub for parm, this is a fun swap!

The temperature dropped and there’s a NEW moon tonight! Our plan is to rest and reset with a piece of cozy cheese and herbal libation! We just got our wheel of the famed ChĂ€llerhocker of Walter Rass Halloween edition! Lydia and Marnie literally just left Moro Formaggi dal 1930 in the Veneto region of Italy where they got to see how Sottocenere al Tartufo is aged! This truffle cheese is further refined by aging in a special blend of ash, cardamom, cinnamon, nutmeg, clove, fennel + licorice!

We have a beautiful wheel of Sottocenere in the case in Claremont right now! Grab a wedge and make yourself a Spritz (it’s already evening in Italy so just pretend you’re here!)

Westcombe Cheddar is in the case all the way from Somerset, England! Westcombe This raw, clothbound cheddar is made from milk so fresh it’s still warm from the cows when it arrives at the creamery. Aged for about a year and half, it’s known as the “five mile cheddar” because you’re still tasting it five miles later. It tastes of brown butter, has a slight tang, and a mellow grassiness. Celebrate October with a wedge and some margaret greenwood bourbon apple butter!
