🧀🔥 Tiny curds. Big transformation.

This is the “cooking the curds” step in cheesemaking — where the magic starts to happen. As we slowly raise the temperature, the curds tighten up, release whey, and begin developing the texture and flavor that make each cheese unique.

Basically… it’s the cheese version of a workout montage. 💪🧀

Every stir matters. Every degree matters. And yes… the creamery smells AMAZING during this step.

🥛🧀 The Calm Before the Curd.
Once fresh milk from Square Deal Dairy in Randolph has made its trip through the pasteurizer, it’s time for one of the most important—and surprisingly gentle—steps in cheesemaking.

We stir the milk slowly and steadily to:
🦠 Mix in the starter cultures evenly
🌡️ Keep the temperature consistent throughout the vat
🧀 Set the stage for great cheese

Why so gentle? If we stir too fast, the butterfat can clump together… and instead of making cheese, we’d start making butter! 🧈😄

Cheesemaking is a little like conducting an orchestra: every movement matters, and sometimes the best results come from taking it slow.
